FEIERN Cuvée Noir Méthode Traditionelle sparkling red
(Winemaking) The NV (Feiern) Cuvee Noir Sparkling was made using an intricate process called Méthode Traditionnelle—the same time-honoured approach used to make French Champagne. The blend is Shiraz and Cabernet Sauvignon sourced from the Barossa Valley floor. The wine spends an average of 24 months in oak and is blended for freshness and complexity – hence the wine being non-vintage for maximum balance of flavours. The base wine is tiraged and yeast is introduced into the bottle with sugar for a secondary fermentation under pressure (which creates the fine bead of bubbles). This wine was ‘En Tirage’ for three years where further secondary characters de veloped in the wine as well as important mouthfeel enhancements from ageing on lees. It was hand-riddled in 2022 and disgorged in December the same year. The wine is ready to drink, but it will age gracefully for approximately 8 years if desired. A stunning Cuvee that is exquisite and complex. (Colour) Deep burgundy with ruby hues (Nose) Primary aromatic fruits of plum, blackberry and black cherry complimented with lifted mixed pantry spice top notes (Palate) Indulgent and full of bold black cherry, plum and blackberry fruit charac ters with complexing pepper, cola, cocoa and mixed spice characters. The sparkling bubbles give a fresh lightness to the bold Shiraz and Cabernet Sauvignon varietals used in this blend. A delicious lingering finish makes this wine perfect whenever you want an uplift, but it is a personal favourite with smoked bacon for breakfast – a must try! AVELINE Rosé Saignée
History Z Wine (Z for Zerk) is the creation of dynamic sisters Janelle and Kristen Zerk. With over 170 years of Barossa heritage behind them they grew up together in the Barossa Valley on a vineyard that has been in the Zerk family for five generations. Winemaking Sourced from premium Barossa Valley Mataro with great Rosé producing attributes. The palate is generous and creamy with good balance (dry with no residual sugar and refreshing acidity). An attractive wine with spice character is achieved from delicate and careful winemaking. The method of draining off skins is referred to as Saignée as it is the French word for bleeding (i.e. the bleeding (draining) of juice from the grape skins). 4-8 hours on skins followed by cool fermentation on a small number of solids to add texture. Colour Pink Turkish delight, vibrant hues Nose Lifted cranberry & strawberry fruits with hints of musk and rose water. Palate Crisp and dry with an amazing fruit flavour spectrum spanning strawberry, raspberry, cranberry, apple and cherry. The fruit splay is balanced with textural and savoury spice notes derived from the premium Mataro fruit. The palate is satisfying with strawberries and cream dominating the lingering finish.
