The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Champagne Guyot Choppin is based in the village of Damery in the heart of the Champagne region, and owned by an independent Champagne house established in 1925. The house style is based on its high stock of reserve wines from previous harvests, which allows their non-vintage Brut to have such consistency from year to year. A blend of 60% Pinot Meunier, 30% Pinot Noir, and 10% Chardonnay, with a minimum 25% reserve wine in the final blend. Ripe, golden apples on the nose, with a powerful, mouth-filling mousse.
