Dalrymple Vineyards Single Site Estate Pipers River Chardonnay
Dalrymple’s Single Site Pipers River Chardonnay is dedicated to showcasing estate fruit that presents higher natural acidity, and concentrated fruit flavours, from old vines that are planted across basalt pocked, deep loam soils. The handpicked fruit is whole bunched pressed to new, and older, French oak puncheons, as well as a 700 litre ceramic egg, where it’s left to mature for ten months. Regular stirring and malolactic fermentation help to develop texture and naturally adjust acidity to ensure the wines balance and fine structure. Dalrymple’s Single Site Pipers River Chardonnay is for fans of the variety, and for those on the fence. Dalrymple describes it as ‘a curvaceous wine, full of cheeky minerality.’ It’s well defined with bright acidity, restrained fruit flavours and a long, mouthwatering finish.
