Released with bottle age this is a wine which will still continue to evolve over many years the toasty lemony flavours becoming richer and more intense. A classic benchmark Hunter Semillon, it has earned its place in the Langtons Classification of Australian Wine.

Winemaker's Selection Vat 1 Semillon only ever comes from the oldest and best blocks. The vines are all dry grown on their own roots, and date back to 1923.

A young and approachable white wine, this wine has been crafted to last a long time in the cellar. The well balanced palate contains fresh citrus elements supported by crisp acidity, leading to a clean finale.

The freshness of this wine demonstrates why Hunter semillon is possibly the most under-rated wine style in the world. The aromas centre around lemon, lime and fresh hay, and the palate is decidedly linear, based on a spine of acidity. This exceptional wine, at six years of age, is still at least five away from its optimum drinking window. 'Little or no colour change; the bouquet is distinctly aromatic, but still focused on primary fruit, not toast or honey; the palate is electrifying, drawing saliva from the mouth with its mix of unsweetened lemon juice/lemon zest and life-giving acidity, the DNA of great Semillon.10.9% alcohol.' Intense aromas of crème brûlée, dried pineapple, and botrytis-kissed apricot fill the senses, accented by a hint of vanilla and blossom. The taste is profoundly rich and full-bodied, yet exquisitely fresh, delivering layers of honeyed pear, sweet spices, and a mineral complexity that extends into a seemingly endless, harmonious finish.

A fresh lively Bordeaux blanc produced from Sauvignon and Semillon, the first vintage of Chateau Cos dEstournel Blanc was made 2005. The grapes are grown north of St. Estèphe, in the Jau-Dignac and Loirac regions. The terroir is a mix of sand, clay, small stones and limestone. The wine is fermented and aged in mostly one-year-old barrels to maintain maximum freshness. Made in small volumes.

Château Mouton-Rothschilds dry Bordeaux white is made from a blend of Sauvignon Blanc, Semillon and Muscadelle, all planted within 4.5 hectares of vines. It is one of the few Bordeaux whites that is subject to malolactic fermentation. Ripe, intense, and elegant, stone fruit and citrus dominate the palate of this wine, with a line of racy acidity to add freshness.
