This Madfish Sauvignon Blanc Semillon has alluring aromas of guava, nashi pear, citrus zest with a hint of white floral on the nose. Released with bottle age this is a wine which will still continue to evolve over many years the toasty lemony flavours becoming richer and more intense. A classic benchmark Hunter Semillon, it has earned its place in the Langtons Classification of Australian Wine.

An elegant bouquet of pineapple, marmalade and botrytis characters. Luscious palate of peach & citrus flavours combines with botrytis sweetness, finishing with a slight touch of refreshing acidity.

Complexity and intensity combine in this very drinkable style by the expert crew at Evans & Tate. The Metricup Road has an appeal which makes it difficult not to enjoy - especially when seafood, white meats and salads are nearby.

This is fun winemaking at it best. A little soak of the juice on skins, a press in the basket press and let the ferment get going. The ferment was stopped by fortification with Brandy Spirit to leave a sweat’ish wine that is now stored in ex Australian Whisky barrels. The wine will continue to evolve the barrel developing complexity from the wood and previous contents. Best fresh from the barrel, it is bottled as required. Each label has the date of bottling hand written on it. This is a single vintage fortified.

Fruit picked in the cool of night, then quickly pressed to stainless steel. It remains on lees to gain some texture, but then bottled quickly, to retain the citrus, floral notes and the brisk acidity.

CIRILLO 1850 Ancestor Vine Semillon, Barossa Valley

This wine is a blend of 79% Sauvignon Blanc, 16% Semillon and 5% Verdelho, and is made from certified biodynamic fruit. Harvested on the fruit and flower days of the biodynamic calendar and fermented without oak, additions of yeast or acid. Some skin contact time before fermentation.

The name ‘Alluvius’ derives from the well drained, ‘alluvial’ soils found in vineyards planted close to river beds. These soils are renowned for growing Semillon as it leads to a unique expression of what is considered to be Australia’s greatest white wine style. Pure Semillon aromas of lemongrass and lime articulate the nose of this classic Hunter Semillon. The palate is intense yet elegant displaying mineral texture with great line and length. A wine of great drive, coupled with extraordinary finesse. Enjoy now or confidently cellar for the next 10-20 years.
