Sourced from Lindsay McCall's estate, this Shiraz is almost eternal in flavour length and intensity. Flavours of plum, raspberry, redcurrant are accompanied by black pepper, anise and vanilla. Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. This lovely Pinot Noir offers all aromas associated with the classic grape variety - apple and pear, with a touch of spice. These aromas shift to a textured and juicy palate, which eventually culminates in a refreshing finish. Pair it with white meat dishes or fish accompanied by rich and creamy sauces.

Hand-crafted from a single vineyard site, The Paringa is a Pinot Noir of utmost class, pedigree and intensity. Made from specifically selected barrels of Pinot Noir that were clearly superior at the time of blending and bottling, the wine is a powerful amalgamation of spice, cherry and charry oak characters with a palate of extreme persistence and integrity. Yet another Lindsay McCall masterpiece.

Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.

PARINGA ESTATE The Paringa Single Vineyard Shiraz, Mornington Peninsula Situated on prime ferrous real estate on the Mornington Peninsula, Paringas cool climate produces wines of poise, power and distinction. The purest expression of their unique terroir, their single vineyard wines are the pinnacles of the Paringa portfolio. Displaying black plums and peppery spice, with a hit of cardamom. A full bodied Shiraz with grainy texture and lasting persistence.

This is a newer world style of Chardonnay showing the elegance of fresh cool climate. Once harvested, the fruit was whole bunch pressed with the un-clarified juice that was fermented with inoculated yeast in seasoned French Oak Barriques. The wine by Paringa Estate was barrel stirred fortnightly during the eleven months of maturation and was sulphured early to retain fruit freshness & prevent malolactic fermentation. The bouquet of this wine is a mix nectarine, citrus/orange and complex sulphide solids aromas. The palate has similar fresh citrus & nectarine fruit flavours along with fine acidity. Chardonnay fruit combined with the complexity of barrel fermentation & maturation.
