While they build their whiskey distillery, they have sourced the finest double and triple distilled malts and a hint of peated malt. Bottled at 46% ABV the whiskey is not chill filtered giving a rich character to a super soft whiskey. Presented in a tall elegant bottle, the Silkie label is reflective of the blue/green colour of the sea at the foot of the Sliabh Liag Cliffs. First blended in 1829 in the small Irish town of Tullamore in County Offaly, Tullamore DEW takes its name from one of the earliest influencers of the newly established distillery, Daniel E Williams (DEW). It is still one of the most famous Irish whiskeys due to its light and elegant flavours that are best savoured over ice.

Writers Tears Pot Still Irish Whiskey delivers a wonderful combination of soft bourbon notes with an undercurrent of light malt with crisp, mouth watering bursts of honey and spice. This is a throwback to the last century in Ireland where spiced Pure Pot Still Whiskey was married with floral single malt.

Tasting note: The entrancing bouquet is spicy, creamy yet fresh, all at the same time. One of the most textural and buxom Irish we’ve tasted: Oily, pithy then more cocoa-like towards the finish with a cascade of sweets suggested, ranging through dark chocolate to vanilla wafer and toasted marshmallow; the oak adds balancing grip, while the overall persistence is quite something as the oils sustain the aftertaste. Equally an Irish to savour with water, which brings another dimension highlighting fruits on the nose (fig, orange oils), as well as in the mouth. Almost like two whiskies in one. Superb. Our Double Barrel has sucked the marrow out of two casks, Bourbon and Oloroso. They each bring their own unique flavour and character. While the Bourbon barrels add, among other things, sweet, smooth vanilla notes, the Oloroso casks layer on those dried fruit and slightly nutty flavours. And of course these are all accented by almost four years resting in Ireland’s mild maritime climate.
