The nose is full of dessert wines, a little fruitiness with a good barley sweetness. The palate is quite full with more dessert wine notes, but with cereal notes and barley, a touch of malty spice and berry fruits with good oaky tannins and little herbal notes. The finish is long with a good oaked note and more noble rot.

Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Aged 4yrs in American Oak ex Makers Mark barrels, Iron House Single Malt Bourbon Cask brings rum and raisin aromas with a subtle vanilla and a spiced herb oak undertone. A wash of buttery warm caramels heat, hazelnut and oak finish with sweet dried fruits to engulf the palate, with a lengthy finish of bourbon heat and spiced oils.

The Isle of Raasay Single Malt is a taste of the ruggedly elegant, exceptionally diverse island, made in small batches from the mineral water drawn from its well on site. A lightly peated single malt balanced with rich dark fruit flavours. The Isle of Raasay Distillerys carefully crafted and unique recipe combines peated and unpeated Raasay spirit that has been matured in three different types of oak cask: high rye whiskey, chinkapin oak and Bordeaux red wine. A vatting of whisky from both the now closed Hanyu and Chichibu distilleries. Ichiro Akuto, the founder of Chichibu Distillery (est. 2004), is also the grandson of the founder of Hanyu distillery (shut down in 2000 and dismantled in 2004). Ichiro rescued around 400 casks before the closure. This "Double Distilleries" release is a vatting of two whiskies: Sherry matured Hanyu and Chichibu matured in a Japanese oak cask. A rare treat. Judged World's Best Whisky at the 2023 World Whisky Awards. To create this whisky M&H commissioned seasoned Oloroso and Pedro Ximenez barrels from Spain. After twelve months in Jerez, the barrels were transported to the distillery and filled with new-make. It's not clear how or why, but this has been declared / classified as the first and only kosher sherry matured single malt whisky in the world. The shyness of the nose doesn't give away much, except that it's whisky. However it's more expressive on the palate where a nutty / dried-fruit kind of sherry is evident, followed by bitter cocoa. Youthful spices add lift and vibrancy before tea biscuit-like malt enters late. One of the drier sherried styles going around, but grows on you. 46% Alc./Vol. Non chill filtered.

Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Sullivans Cove is the quintessential small-batch luxury whisky.
