Sullivans Cove French Oak Ex-Tawny Single Single Malt Whisky (TD0289)
Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Glenmorangie 18 Year Old Extremely Rare Malt
To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.
Macallan The Macallan 12 Year Old Double Scotch Whisky
A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Laphroaig 10 Year Old Single Malt Scotch Whisky
"So consistent is the Laphroaig 10, that this is one of the whiskies I test myself each day with to check that my nose and palate are on song". 95 points - Jim Murray 2022 From the remote island of Islay in the Western Isles of Scotland. Laphroaig, pronounced 'La-froyg', is a Gaelic word meaning 'the beautiful hollow by the broad bay'. The full history of Laphroaig seems to be lost in the mists of time. It's clear that the Irish had been distilling on Islay for many years and that the locals picked up the skills when they left, but because it was illegal the small stills on the farms were rarely discussed - just a nod and a wink in the right direction!What is known, is that the family called the Johnstons started farming there around 1800, and that soon after messers Charles and Willie Doig were asked to do some 'work on a distillery' at Laphroaig. By 1815 Laphroaig's reputation had spread and the tax man was getting suspicious so they 'officially' established 'Johnston & Johnston' - the legend of Laphroaig had begun. Laphroaig is a malt to either love or hate. Full of the smoke and iodine, seaweed character Islay has become famous for, it has spurred some commentators to describe it as 'mouthwash', 'hospital gauze' or at best, 'medicinal'. Suffice to say, this is not a whisky for the faint hearted. Take Laphroaig neat like a stalwart, or with a splash of soft water. Roll it around on your tongue, release the pungent earthy aroma of blue peat smoke, the sweet nuttiness of the barley, the delicate, heathery perfume of Islay's stream and either swallow or spit. The final judgment on Laphroaig must always be left to the individual. Tasting note: Brassy gold. Seems a little tamer than previous incarnations, earthier too with a farmyard edge. Less iodine / elastoplast than before, more peppermint, baked citrus, kipper and lanolin, creaming up towards the finish, trailling off with hints of Fisherman’s Friend. 40% Alc./Vol.

The The Hakushu Single Malt Japanese Whisky - Distiller’s Reserve was produced with both heavily-peated and lightly-peated malts for a deep and complex whisky. On the nose there are hits of grassy notes, pine, and peppermint. It is rounded out with cucumber and melon. The palate has pops of citrus zest and mint. The whisky finishes long and smoky.

Morris Sherry Barrel Single Malt Australian Whisky
Morris Sherry Barrel is a mature style single malt whisky that highlights the perfect balance of oak, malt, and sherry barrel influence. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. The result is a well-integrated and very approachable Australian single malt which the broad whisky consumer can embrace. Bottled at 46% ABV. Colour: Tiger-eye gemstone with copper highlights. Nose: Spun toffee, baked fruit flan with peach compote and fresh sherry cask notes. Glenmorangie Cadboll Estate 15 Year Old Whisky
With Cadboll Estate Batch 3, the essence and flavor of their cherished Highland home are shared. Crafted by their whisky creators from field to glass, the third batch of this single estate whisky is described as deep and creamy, featuring notes of sweet spice and nuts. Selected from two Cadboll harvests, this batch blends classic bourbon-matured Glenmorangie, known for its richness and creaminess, with a portion of Cadboll barley stock that has been finished in Amontillado casks for approximately a year. This finishing process introduces nutty, spicy, and sweet flavors, resulting in a beautifully integrated Glenmorangie 15 YO. A gently spicy mouthfeel leads into a burst of sweet and spicy flavours, including heather honey, gingerbread, hazelnut praline, fudge, toffee and a touch of clove. Nuttiness from the Amontillado cask is always present, while a lingering aftertaste has touches of marzipan, coconut and freshly baked fruit loaf.
