To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Morris Sherry Barrel is a mature style single malt whisky that highlights the perfect balance of oak, malt, and sherry barrel influence. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. With this whisky, White Oak opted for a little twist in their aging process using ex Sake Casks to mature for three years. This provides a sweet and fruity profile. Full boded palate with deep sweetness, malt, and a very slight peat. Medium to long finish. Located in the city of Akashi in the Hyogo Prefecture, by the seaside of the Seto Island Sea is the White Oak Distillery. This distillery was founded in 1888 by Eigashima Shuzo and has been producing Sake and Shochu every since. In 1919, Eigashima Shuzo obtained a license to manufacture whisky and when the company moved to their current facilities in 1984, the White Oak Distillery was born.
