Penfolds Dourthe Cabernet Sauvignon
Since 1844, Penfolds has been grounded in experimentation, curiosity and uncompromising quality. This pioneering spirit still rings true after nearly two centuries and is what has helped them become one of the most celebrated winemakers in the world today. The creation of this limited release Cabernet Sauvignon began as a quest to create something real, different, and aspiringly lofty, together with our trusted partner Dourthe Bordeaux. The French component of this wine was made at two of the Dourthe-owned wineries. Australian components of this wine were made at Penfolds Nuriootpa Winery (South Australia). The French and Australian components were blended and bottled in South Australia. A natural match with lamb studded with rosemary and thyme. Slow braised beef cheeks. Cheese: English cheddar, Grana Padano, Limburger.
Chateau Lafite-Rothschild 1er cru classe
One of the most famous - as well as one of the most expensive - wines in the world, Chateau Lafite Rothschilds history dates back to 1235, by which time, it is believed, the vines were already planted and thriving. Nearly 1,000 years later it still retains the name of its then-owner Gombaud de Lafite. It wasnt until 1868 that the Rothschilds came to become the Chateaus owners, after it was sold at public auction in Paris - and it remains in their hands today. Producing an elegant Paulliac wine, Chateau Lafite is renowned for its characteristic blend of rich dark fruit with spicy, savoury and earthy notes of cassis, tobacco, and truffle. The 2016 earned sterling reviews, with James Suckling scoring it a perfect 100 and speculating on its standing as Perhaps the greatest Lafite since the legendary 1959.
Penfolds Bin 169 Cabernet Sauvignon
Bright plum in colour, Penfolds Bin 169 Cabernet Sauvignon displays delicate notes of mint and blackcurrant, with a more savory bouquet of semi-dried tomatoes and fruit chutney at the end. A hint of oak and spice adds extra warmth. On the palate a flavour-wheel of spearmint, milo powder, chocolate and black liquorice.
Parker Estate 1st Growth Cabernet Sauvingnon
Crafted from the estate's best Bordeaux-origin Cabernet Sauvignon grapes planted in 1985 on terra rossa soil and aims to rival Bordeaux First Growths. First Growth is only produced in vintages where fruit quality and varietal typicity is deemed to be exceptional. Fermented for 12 days and macerated for a further 28 in closed fermenters, the wine gained tannin structure and aging potential. Pressed into 80% new French oak barriques and matured for 18 months, developing fine-grained tannins and a tightly structured wine capable of improving over 20 years of cellaring. 100% Cabernet Sauvignon. Deep, dense red with purple hues. Aromas of cassis, blackberry, dried herbs, and cigar box. Palate of cassis and dried herbs leading to blackberry and spice, with restrained, long-lasting tannins.

Max’s Cabernet Sauvignon displays the Penfolds ‘stamp’ inspired by Max Schubert.
Napanook Cabernet Blend Napa Valley
The second wine of Napa Valley’s famed Dominus Estate, this wine is made solely from grapes grown at the historic Napanook Vineyard in Yountville, Napanook is blended from vineyard blocks carefully selected for their lively fruit, soft tannins, and early maturing characteristics. The wine is created to be consumed young and enjoyed with food, but will also age well for more than a decade. The vineyard is entirely dry-farmed, allowing the vines to draw deeply on the land’s unique geology. The viticulture and winemaking are undertaken meticulously, with the objective of producing wines that are pure, balanced, and complex. Minimal intervention and restraint throughout the process of grape berry selection, fermentation and ageing preserve the character of the fruit. The resulting wines, with a tremendous potential for ageing, convey the very personality of this historic vineyard.
Woodlands Alex Cabernet Sauvignon
Woodlands, established in 1973, has emerged as one of the regions important producers of Cabernet Sauvignon. The original, dry-grown 3.2 hectares, planted between 1973 and 1976, has now expanded to 10.5 hectares. The sandy and gravelly red/brown loams over lateritic sub-soils are well suited to Cabernet Sauvignon. Organic and biodynamic principles are gradually being introduced. Batch-vinification in open and closed, stainless-steel fermenters with minute parcels of Malbec optimises fruit complexity. Typically the wine shows cassis/ black fruit/ cedar aromas, fine-grained tannins and underlying savoury oak.
Penfolds Bin 407 Cabernet Sauvignon (Gift Boxed)
Penfolds has a rich history dating back to 1844 when Dr. Christopher and Mary Penfold arrived in Australia with a vine cutting and a bold vision. They purchased 500 acres of land in South Australia and began producing tonics, brandies, and fortified wines made from grapes and Australian sunshine. Christopher's planting of vines and his philosophies continue to influence Penfolds to this day. Mary Penfold, the unsung chief of Penfolds, played a significant role in the winery's experimentations, growth and winemaking philosophies. Max Schubert became the company's first Chief Winemaker in 1948 and created the long-lasting Penfolds Grange in the 1950s. The tradition of 'bin wines' began in 1959 with Kalimna Bin 28 becoming the first official Penfolds Bin number wine. Penfolds continues to innovate, with the release of the rare 2004 Kalimna Block Cabernet Sauvignon in 2012 and the 170th anniversary celebration in 2014. Today, Penfolds remains one of Australia's most famed and respected winemakers, driven by generations of visionaries and innovators who strive for excellence in winemaking. First released in 1993 with the 1990 vintage, Bin 407 was produced in response to the increasing availability of high quality cabernet sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still with structure and depth of flavour. This is a textbook definition of cabernet sauvignon - varietally expressive Bin 407 highlights the rewards of Penfolds multi-vineyard, multi-region blending, with a core of ripe fruit supported by sensitive use of American and French oak. The Penfolds Bin 407 Cabernet Sauvignon 2021 (Gift Boxed) showcase a wine that has been carefully crafted using a unique blend of maturation techniques and vintage conditions that have resulted in an exceptional South Australian cabernet sauvignon. Maturation for this wine involved 12 months in French (25% new) and American (12% new) oak hogsheads, while the remainder was matured in 1-y.o. French and American oak hogsheads. This maturation process infused the wine with subtle but complex oak flavours that perfectly complement the fruit aromas and flavours. The vintage conditions were ideal for growing the grapes in Coonawarra, Wrattonbully, Padthaway, McLaren Vale, Barossa Valley and Adelaide Hills regions. Padthaway yields were 25% above the norm and the mild summer and autumn conditions in all regions allowed the grapes to ripen evenly and slowly. The wine's crimson red color entices the senses, while the nose opens up with varieties of blackberry, mulberries and violets. Aromas of bay leaf, wet tobacco and baking spices provide further intrigue. On the palate, the wine is concentrated with cool dark fruits and the notes of grilled capsicum and cumin spiced eggplant create a unique savory flavor profile infused by cherry wood smoke and sandalwood. The tannins are firm and persistent, with a hint of bitter dark chocolate. While the wine is lively and energetic, it is built to last and is approachable yet clearly designed for a long spell in the dungeon. This wine is a perfect match for savory dishes and will continue to evolve and develop its complexity until at least 2055.
Penfolds Bin 407 Cabernet Sauvignon
Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.
Chateau Latour 1er cru classe
The formidable fortress depicted on the famed vanilla Latour label was built to withstand the Gironde pirate attacks of the 15th Century. And, truly, as well as the tower still stands, so does Latour and its consistent excellence regardless of vintage. Nominally Pauillac, this First Growth sits almost astride the border of St. Julien and its output as one would expect is dominated by Cabernet Sauvignon with 10 per cent awarded to both Merlot and Cabernet Franc. Any experience with Latour is to be savoured with patience this notoriously slow-developing wine requires at least a decade or twos development. But the reward for this patience is a fulsome melange of power, finesse, depth and tone.
