Brothers David and Nicolas Rossignol run this 100% Organic and Biodynamically farmed Domaine located in the very heart of Gevrey Chambertin. Very early to the Sustainable farming movement, all the family's vineyards, located in some of the most impressive vineyards in Burgundy, were converted to Certified Organic in 2004.

Oldest Pinot Noir Vineyard in Ningxia, aged for 12 months, round and juicy, with fresh aromas of berries, cherry and rose, silky tannins, a vibrant acidity and a long finish.

The Cuvée Classique is drawn predominantly from the Domaine's vines on the mid-slope of the Clos but also plots on the lower and upper parts of the vineyard. While there's certainly more depth and fruit intensity here, there's also more detail and clarity and exceptionally fine, powdery tannins that coat the tongue and drive the very long finish.

The Pinot noir vines used for this wine by Yeringberg were planted in 1969, 1970 & 1974. There are two clones the younger vines are MV6 and the older vines are known as the Rutherglen clone. All the fruit is crushed, de-stemmed and inoculated. Fermentation is generally rapid, with temperatures reaching 32°C. Ferments are plunged by hand every 8 hours. It is pressed as soon as the ferment is dry. The wine is matured in hogsheads, about 30% new, for about 18 months, with 2-3 rackings. Not filtered.

Domaine Jean Grivot is one of the finest producers here and this wine is intended to be a classic expression of the village with red and black fruit perfumed with spice and violet nuances. The wine shows aromas and flavors of red berries, herbs, and purple flowers. The palate is rich with ripe fruit and medium weight with bright acidity and fine tannins. Aging in up to 25% new Burgundian pièce brings notes of vanilla, toast, and baking spices.
