Bollinger R.D.

Champagne Bollinger is a prestigious and renowned champagne house that has been producing exceptional sparkling wines since 1829. Founded by Athanase, Paul and Joseph, the house quickly gained a reputation for excellence. Over the years, successive generations of the Bollinger family continued to uphold the tradition of producing exceptional champagnes. The acquisition of prime vineyards and the marriage of Jacques Bollinger to Lily Bollinger were significant milestones in the house's history. Lily Bollinger played a crucial role in preserving the quality and integrity of the champagnes during challenging times. Champagne Bollinger remains family-owned and is known for its commitment to traditional winemaking methods, resulting in complex and age-worthy champagnes. Located in the heart of the Champagne region in France, Bollinger is known for its commitment to quality, tradition and craftsmanship. One of the distinctive features of Bollinger champagne is its use of a high proportion of Pinot Noir grapes in the blends. This gives their champagnes a unique richness and depth, setting them apart from other houses. Bollinger carefully selects grapes from its own vineyards and trusted partner vineyards, ensuring that only the finest grapes are used in the production process. Bollinger takes pride in its traditional winemaking methods, which have been handed down through generations. The champagnes are aged for an extended period, well beyond the minimum requirements, allowing them to develop complexity and character. This dedication to time-consuming aging is a testament to Bollinger's commitment to producing exceptional wines that stand the test of time. Bollinger's commitment to quality extends to every aspect of their production, from the vineyards to the cellars. They have their own cooperage, ensuring that the barrels used in the aging process are of the highest quality. The champagnes are aged in cool dark cellars allowing them to mature gracefully and develop their signature flavors. Bollinger stands out among Champagne houses for its exceptional approach to reserve wines. Instead of storing them in tanks, Bollinger bottles the reserve wines, allowing them to age in magnums for several years. This unique process, called "prise de mousse," stabilizes the aromas of the wines. These reserve wines provide a rich palette of aromas for the Cellar Master to create blends with explosive yet subtle and precise flavors. The result is Bollinger's incomparable character and consistent quality in their wines year after year. Bollinger R.D. is an extraordinary wine that stands apart from the rest. It undergoes a unique aging process on the lees for an extended period before being hand-disgorged. The result is a powerful and rare vintage that showcases a beautiful contrast between an exceptional freshness on the palate, enhanced by the extra-brut dosage, and the aromatic intensity of the greatest vintages. In the case of the 2007 vintage, Bollinger R.D. takes a nostalgic turn, returning to its roots and historic label. The original material and legendary font from the 1952 vintage have been restored, proudly displaying the date of disgorging. This attention to detail and authenticity is a true rediscovery. The blend of the 2007 vintage consists of 70% Pinot Noir and 30% Chardonnay, featuring an impressive 91% Grands Crus and 9% Premiers Crus. A total of 14 crus are carefully incorporated into the blending process. Fermentation takes place entirely in oak barrels, adding depth and complexity to the wine. Bollinger R.D. is released for sale just a few months after disgorgement, with an extremely low dosage known as "extra brut" at only 3 grams per litre. This recent disgorgement ensures that the wine maintains its remarkable freshness. Bollinger R.D. 2007 1.5L Magnum offers intense shimmers of gold, captivating the eye. On the nose, it reveals a complex profile with enticing aromas of honey and brioche. These initial notes are followed by a delightful array of spices, including ginger, cumin, caraway and more. As the wine evolves, it unveils additional layers of flavour, with hints of mirabelle plum, dried apricot and fresh hazelnut. Upon tasting, Bollinger R.D. 2007 1.5L presents a lively and clean opening, showcasing notes of white plum, walnut and aniseed. Its freshness is truly remarkable, creating a beautiful tension on the palate. To fully appreciate the wine's unique style, it is recommended to serve Bollinger R.D. at a temperature of 8°C, allowing its aromas to evolve throughout the tasting experience. There are two distinct experiences when enjoying Bollinger R.D. The first involves tasting the wine shortly after disgorgement, offering a specific aromatic range with complex fruity notes. Alternatively, one can choose to cellar Bollinger R.D. for several more years, allowing it to mature and reveal the depth of aromas typically found in the finest vintages.

Chateau de la Tour Grand Cru Clos Vougeot Vieilles Vignes

Radio Coteau Sonoma Coast La Neblina Pinot Noir

Domaine Faiveley Chambertin Clos De Bèze Ouvrées Rodin Grand Cru

The Domaine Faiveley Chambertin Clos De Bèze Ouvrées Rodin Grand Cru 2020 is a wine of immense complexity and depth, representing the very best of Burgundy's winemaking tradition. This Grand Cru is crafted with meticulous attention to detail by the skilled winemakers at Domaine Faiveley. Based in Nuits-St-Georges, the famous Domaine Faiveley was founded in 1825 and in more recent times, the domaine has greatly expanded its vineyards across the entire Côte d’Or. The grapes are entirely de-stemmed and fermented in a mix of new wooden vats for the top end wines and stainless steel for the lesser cuvées. Once notorious for being fairly austere, there has been less emphasis on extraction over the last ten years and the wines show increased freshness, purity of fruit and more judicious use of oak. A contender for one of the most improved domaines in Burgundy over the last decade. Coming from a "Vieilles Vignes" parcel (60 years old), "Les Ouvrées Rodin" is characterised by its elegant tannins and delicate structure. Marthe Sirieys, Erwan Faiveley's great grandmother, had family links with art amateur Maurice Fenaille. In 1885, the latter became Auguste Rodin's patron. In memory of the unique relationship with Auguste Rodin and as a hommage to the timeless works created by him, Domaine Faiveley names this new gem of the Côte de Nuits: "Les Ouvrées Rodin" The grapes are harvested and sorted by hand however the proportion of de-stemmed grapes and whole clusters varies depending on the vintage. The wines are punched down daily in order to extract colour, tannins and aromas from the skin of the grapes. After this wine undergoes a 19 day vatting period, the alcoholic fermentation is complete. The free-run wine is run off using a gravity system whilst the marc is pressed slowly and gently in order to extract an exceptionally pure press wine. Then, the wine is aged for 16-18 months in French oak barrels (60% new oak and 40% one-wine barrels) which have been selected for their fine grain and moderate toast. Finally it is left to age in cellars at consistent, natural hygrometry and temperature. The vines for this wine were planted in 1966. Deep ruby red hue with purplish glimmers. The complex nose offers a combination of fruit, spice and floral notes. The lively palate displays exceptional tension, elegant tannins, a hint of white pepper and menthol notes. Les Ouvrées Rodin is an intense, deep, smooth, elegant and subtle wine and a perfect reflection the character of its historical terroir. Drink now or will age gracefully with careful cellaring until 2055.

Camille Giroud Pommard Les Cras

Camille Giroud, a Swiss wine merchant, marries Miss Deschamps and takes over her family's wine trade firm, which he renames Maison Giroud Deschamps. In 1903, the company becomes known as Camille Giroud and establishes its premises in Beaune. Unlike other wine merchants, Camille only buys musts and finished wines, relying on his talent as a wine maturer to establish the reputation of his company. After Camille's death, his youngest son, Lucien, takes over and maintains the family tradition. In the 1990s, the company faces financial difficulties and Bernard and François Giroud begin to buy grapes instead of purchasing wine. David Croix joins the Maison in 2001, launching new projects and building a new vat house. In 2002, Ann Colgin and other investors take over the company, with David Croix named as Manager in 2007. The Maison remains exclusive and pursues new projects under the leadership of Carel Voorhuis. Pommard is a village located between Beaune and Volnay in the Côte de Beaune region of France. In 2004, the village was called Polmareum, which later became Pomareum, derived from the Latin word "pomarium" meaning orchard. Camille Giroud Pommard Les Cras 2020 comes from 35-year-old vines located in Pommard, facing East/South-East and at an altitude between 280 and 320 meters. These vines are planted in limestone soil. It reveals notes of wild cassis, juicy quetsche plum, wild strawberry, cherry, rose, lily, pepper and cinnamon. The palate is elegant, juicy, fresh and has a racy minerality, tension and a finely tight grain. The wine expresses notes of cherry, cassis, small red berries, lily, rose, blackberry, rosewood and sweet spices. It is a beautiful, full-bodied and dynamic wine with a persistent hint of chocolate. Domaine Collotte Gevrey-Chambertin Les Evocelles

The Collottes have been grape growers in Marsannay for four generations, but it wasn’t until 1981 that a young, 16 year-old Philippe Collotte bottled the first wine under the name of Domaine Collotte. He subsequently purchased some mature vineyards of about 40 years of age in both Gevrey-Chambertin and Chambolle-Musigny, to further expand the domaine’s repertoire. Just a few barrels of this single vineyard bottled on its own from vines planted in 1955 located high up above the village on the combe in Les Evocelles (part of which is classified as premier cru). The wine shows excellent lift and finesse and freshness to the aromas. The palate is very expressive already with fine structure and silky fine tannins. A very fine addition to the range.

Cloudy Bay Pinot Noir

An enticing wine that will awaken your senses from the very first encounter. Leather, boysenberry and sweet spices combine. The supple palate with its transparent flavours of red fruit and earthy textures leads to a finish that is both balanced and intriguing.

Sylvain Cathiard Hautes Cotes de Nuits Rouge

Product Description The 2022 Sylvain Cathiard Hautes Côtes de Nuits Rouge is a remarkable addition to the Domaine's portfolio, showcasing the intricate potential of the Hautes Côtes vineyards. Sourced from a small but carefully selected 2.5-hectare parcel in Villars Fontaine, located at an elevation of 350 meters above Nuits-St-Georges, this wine expresses both the uniqueness of its terroir and the finesse of Cathiard's winemaking approach. The wine presents an inviting dark fruit profile, with a slightly denser colour compared to other Bourgogne wines from the Côte. It's a youthful expression with a plumper raspberry fruit profile, complemented by a subtle dryness from the oak, which will integrate with time. The wine offers great structure, balanced by juicy freshness and fine tannins, making it a perfect early-drinking option while waiting for more complex village wines to mature. With a medium-bodied profile, this wine has a pleasant length, offering a youthful bitterness that will soften with age. This Hautes Côtes cuvée is the ideal introduction to the Domaine’s Pinot Noir style, and with only a limited production of around 7 barrels in a good vintage, it’s an exclusive and limited offering. Maker Domaine Sylvain Cathiard, founded in the 1930s by Sylvain’s grandfather, is a boutique estate that has gained a stellar reputation for its exceptional wines. Based in Vosne-Romanée, the estate spans 5 hectares, with vineyards in prestigious appellations including Vosne-Romanée, Nuits-St-Georges, Chambolle-Musigny, and a coveted plot in Romanée-St-Vivant. Under the meticulous stewardship of Sebastien Cathiard, who took over in 2011, the estate has flourished, with an emphasis on sustainable viticulture, organic principles, and minimal intervention winemaking. Sebastien’s approach to winemaking is hands-off, allowing the natural expression of the terroir to shine through while focusing on elegance, purity, and balance in each wine. The Domaine's reputation has skyrocketed, with wine writer Neal Martin calling it one of the top producers of Vosne-Romanée, earning acclaim from both critics and collectors worldwide. The Domaine's expansion into the Hautes Côtes de Nuits, with new parcels in Villars Fontaine, further enhances the Cathiard legacy. Sebastien has created a purpose-built facility that allows for more room to vinify and age wines, ensuring that this new addition, along with the core vineyard plots, will be available to more consumers, all while maintaining the Cathiard style. Philosophy Sebastien Cathiard’s philosophy centres around producing wines that are harmonious, elegant, and true to their terroir. With a clear respect for the natural environment, the Domaine follows organic and biodynamic principles, fostering balance in the vineyard and letting nature dictate the pace of growth. Sebastien’s commitment to minimal intervention allows the vineyards to express their full potential, producing wines that are pure and reflective of their origins. The winemaking process is marked by an almost non-interventionist approach, using natural yeasts and allowing the wines to mature on their lees for up to 18 months. Sebastien’s use of oak is thoughtfully measured, reducing the percentage of new oak over time to ensure the wine retains its fresh fruit character while gaining complexity. His wines are structured, with an emphasis on balance and ageability, crafted to highlight the beauty of Burgundy’s terroir. With a production of only about 50 barrels per year across all appellations, the wines are limited, highly sought-after, and offered first to loyal customers. Tasting Notes Nose Dark Fruit, Pepper, Subtle Oak The nose opens with a vibrant mix of dark fruits, including ripe raspberry and black cherry, interwoven with a peppery spice and a touch of subtle oak.
