Domaine Paul Chavy Gevrey Chambertin
Product Information: Paul Chavy is the son of the renowned Burgundy vigneron Jean-Louis Chavy. Paul set up a new and prestigious négoce business enabling the family estate to offer a wider range of wines while creating opportunities to work with different terroirs and from Saint Aubin up as far as Gevrey Chambertin. The 2022 Gevrey Chambertin opens with an enticing bouquet red and dark berries, dried herbs, and turned earth. Powerful dark fruits on the palate, vibrant acidity balances the wine, with fine firm tannins in tow. Excellent ageing potential. 100% de-stemmed fruit given a cold maceration for several days before fermentation on skins for 27 days with only a gentle daily pump-over (no hand plunging). Aged on fine lees in barrel, all 228 litre barrels for the red wines, for 12 months before blending back in tank and bottled un-fined after a very light filtration. Maker: The Chavy family has been rooted in Puligny-Montrachet for over 200 years, but it was not until 1986 that Gérard Chavy began to estate-bottle his wines, previously selling them to négociants. Following Gérard's retirement around 2005, the estate was divided into two separate entities managed by his sons, Jean-Louis and Alain Chavy. Jean-Louis Chavy has since developed a state-of-the-art winemaking facility, complete with a temperature-controlled cellar situated at the base of the village. This allows him to work comfortably while ensuring the wines are stored in optimal conditions. His son, Paul Chavy, has been part of the estate since before the pandemic and has embarked on creating his own range of wines, sourcing fruit from regions including Saint-Aubin and as far as Gevrey-Chambertin. The Philosophy: Paul Chavy returned to the family estate in 2020, bringing valuable insights from his studies and professional experiences. He has established a prestigious négoce business to expand their range of wines and deepen his understanding of various terroirs, villages, and crus. For the white wines, Paul employs a meticulous vinification process, featuring long, slow pressing in a pneumatic press to preserve the finest lees. The wines age in 350-litre barrels from a variety of cooperages for 11 months, followed by an additional 6 to 7 months in tank before bottling, with only light filtration and fining when necessary. The red wines are crafted with care, using 100% de-stemmed grapes. After a cool maceration of 5-7 days in stainless steel, they undergo 17-22 days of fermentation with gentle pump-overs and no punching down. After 12 months in 228-litre barrels, the wines are blended in stainless steel tanks for another 6-7 months before bottling, without fining and with light filtration. This meticulous approach, combined with Paul’s fresh insights and growing experience across new terroirs, showcases the domaine's versatility while delivering the exceptional wines they are renowned for. Domaine Armand Rousseau Charmes-Chambertin Grand Cru
Product Information: Domaine Armand Rousseau ranks with Romanée-Conti, Leflaive, Jacques Prieur, and a small handful of names that are the stuff of Burgundy legend. These domaines produce impeccable quality wines from vintage to vintage, and consistently place Burgundy at the top of the wine world. Each of the domaine’s prestigious holdings are in Gevrey Chambertin, with the exception of Grand Cru Clos de la Roche in Morey-St. Denis. The domaine has 8 hectares of Grand Crus, including in Chambertin and in Clos de Bèze. Rousseau also owns acreage in the famed Premier Cru Clos St. Jacques, and the monopole, Grand Cru Clos des Ruchottes. Director and heir to the domaine, Cyrielle Rousseau, remarks on the stylistic differences of the Grand Cru sites, "Charmes is supposed to be more feminine and elegant than Mazy-Chambertin, which is often more structured. Chambertin is strong and firm, while Clos de Bèze is more delicate and spicy. Each one of the grand crus is so different." Moreover the wines from Gevrey are generally fruitier and spicier than those from Morey Stain-Denis which are quite mineral, tannic and monolithic in comparison. Regarding winemaking, simplicity is key. For all wines around 90% of the grapes are destemmed. All the vine fruit is placed in open stainless steel tanks, where it is fermented for 18 to 20 days. During fermentation between 31-34 degrees, the juice is gently and continuously pumped over with regular treading to release colour and tannins. After fermentation, the wines are delicately pressed in a pneumatic press and are allowed to settle for 24 hours. Finally, the winemaker transfers the wine to oak barrels. Here, malolactic fermentation takes place naturally. The wine is aged for 18 months in before bottling. Every Armand Rousseau wine is released two years after bottling. Maker: Domaine Armand Rousseau is one of Burgundy’s greatest producers. Their wines inspire awe in the fine wine world, with each vintage highly sought after. Eric Rousseau practices traditional viticultural techniques combined with modern methodologies to bring out the best expression of his Pinot Noir. This includes Green harvesting helps to reduce yields (30-40 hL per hectare) and produce concentrated fruits. Leaf stripping helps the grape vines get enough sun exposure for ripening. Plowing of the vineyards helps aerate to the soil. Avoiding the use of chemical fertilizers further maintains soil health. Nose - Floral Top Notes, Red Cherries, Turned Earth A discreet application of wood frames pure aromas of red cherries, just turned earth and a floral top note. Palate - Tensile, Fine, Powerful The palate is supple but racy middleweight flavors aren't quite as concentrated but they're finer and more powerful. Produced from one of the Top 100 Wineries in the World the Giant Steps Pinot Noir is complex with terrific varietal character. With a minimalist approach to winemaking this Yarra Valley favourite oozes elegance and drinkability. Giant Steps is an independent winery in Healesville, Victoria, owned by Phil Sexton. Phil first made his name in establishing some noted micro-breweries, such as Little Creatures, and later established Devils Lair in Margaret River. First released in 2001, Giant Steps focuses exclusively on the distinctive expression of single vineyard sites in the Yarra Valley. Grapes are drawn from estate and leased vineyards, as well as a selection of long-term contracted vineyards. Giant Steps wines are produced fastidiously in the vineyard and vinified with minimal intervention so that each is a faithful expression of site, vintage and culture. Giant Steps focuses on restrained Chardonnay, Pinot Noir and cool climate Cabernet/Merlot blends. These single vineyard wines are sourced from five different vineyards throughout the Yarra, so each is a fingerprint of location and site personality. The name Giant Steps comes in part from Phils love for jazz and John Coltranes album of that same name, and in part due the Giant Step Phil took in relocating with his family from Margaret River to the Yarra Valley. Giant Steps wines are always exclusively single vineyard Yarra Valley wines. They are hand made in small batches using gravity flow principles. Production of the Giant Steps wines is very limited with some vineyards producing as little as 200 cases each vintage some wines are not produced each year if vintage conditions do not allow. These wines are often hard to find in retail outlets as they are mainly sold through the cellar door and through selected restaurants.
