Jasper Hills Emilys Paddock is mostly shiraz - with a defining splash of cabernet franc. A lot has been made over the years of the terroir difference between Jasper Hill Emilys and Georgias, but its the cabernet franc that really differentiates them. Patrick & Christophe Bonnefond Les Rochins, Côte-Rôtie Parcel selection on the Côte-Rozier is located in the north of the Côte-Rôtie AOC, on schist and mica-schist terroirs. Vinification is the same as the previous cuvée, ageing for 20 months in 400 litre barrels, 30% of which are new wood. A Syrah that is typically characterised by cherry, blueberry, olive paste and spiced cake.

First made in 1959, Penfolds Kalimna Shiraz is an icon in the field of warm-climate Shiraz. Always ripe, robust and generously flavoured. The Bin 28 is named after the Kalimna vineyard that was purchased back in 1945 and from which the original fruit was sourced from. Today, the Bin 28 is a great example of the Penfolds dedication to multi-region, multi-vineyard blending. The Barossa Valley will always remain an integral part of the Bin 28 blend providing rich, vibrant primary fruit flavours.

A full and fruity Shiraz, Kaesler Old Bastard is fresh on the nose with hints of blackberries, raspberries and blueberries. On the palate, forest fruits, blackberry and mulberry mingle with spices of anise and nutmeg with some coffee and chocolate notes. Tannins are silky and balanced, with a nice acidity. This shiraz will cellar for 20+ years.

M. CHAPOUTIER Ermitage Le Pavillon, Hermitage Rare and highly sought-after, M.Chapoutiers brooding Ermitage Le Pavillon comes from a parcel of vines anchored on the granite soils of the Bessard commune lower down on the Hill of Hermitage. Le Pavillon refers to the ruins of an old stone-house located just below the vineyard on the famous Hill. The Syrah grapes are hand-harvested and entirely destemmed before undergoing vinification in concrete tanks. Following an extended maceration the wine is matured in a mix of approximately 30% new and 70% seasoned French oak casks for 18-20 months.

The Glaetzer family have been part of the Barossa winemaking scene since 1888 and now Ben takes over the reigns and produces Shiraz of the utmost intensity and concentration. Named after the ancient Egyptian god Amon-Ra who was the champion of the poor and troubled and was central to personal piety, the temple of Amon-Ra is believed to be the first to plant a vineyard to produce wine for the citizens of the temple. This incarnation is rich, full-bodied and viscous to the palate, yet with sublime oak integration and a balance on the back palate that is quite lifted allowing it to be paired with many meals and a prime candidate for medium to long term cellaring.
