From the Singlefile vineyard in the Denmark sub-region on the Great Southern, this is a modern styled. lightly oaked chardonnay showing grapefruit and white peach aromas and sublte oak. The palate displays citrus and stone fruit with a soft creamy finish.

Pale gold colour with green reflections. Vivid nose of mineral notes, enhanced by a bouquet of white flowers aromas and citrus hints. Fresh on the palate with lime notes, well-balanced between with a zesty acidity. Ideal with starters and fish , oysters, white meat in sauce like creamy chicken breast and goat cheese.

These traditional sparkling varieties of Chardonnay, Pinot Noir and Pinot Meunier are sourced from the cool climate Adelaide Hills, and are picked early to retain high natural acidity. Small batches of these low yielding grapes are gently pressed in stainless stell basket presses. Following primary and partial malolactic fermentation the inidividual parcels are bottled and inoculated with yeast and sugar to encourage secondary fermentation. The cuvee is fermented in the bottle to develop complexity for approximately four years. This is a dry style sparkling with minerality, a crisp acid backbone and layers of flowers, fruits and toasty savoury nuances.

This cool climate chardonnay has fresh citrus and stone fruit aromas with bright fruit on the palate, creamy texture and a clean finish.
