Born-and-bred Hunter Valley specialist, Aaron Mercer spent years at Tamburlaine, and had stints at Tyrrell’s and Brokenwood, before setting up on his own. He’s also worked in California, France and Germany so brings a great deal of experience to his winemaking, with a a great small-batch range from premium Hunter Valley sites, Tumbarumba and Orange. This classy, gently oaked Hunter Chardonnay boasts fresh peach, vanilla, and pannacotta flavours and a nutty edge.

A ripe, fleshy quaffing Chardonnay. Bright straw colour with yellow green tinged edges and a watery hue. Ripe peach and crème brulee like aromas fill the nostrils with hints of toasty oak and butterscotch also present. Fleshy and ripe, the palate features peach and tropical fruit flavours over vanillin spice and traces of crème brulee. Balanced acidity with a nicely shaped finish. Drink over the next year. Elegant (and utterly delicious) White Burgundy from a fine family domaine, established in 1909 by Joseph Matrot, and today run by the third generation, Elsa and Adèle Matrot. They are renowned as “a top-class Meursault producer” (Wine International), while Neal Martin wrote, "great wines are being made at this address". The sisters, like their father before them, believe in using oak sparingly in order to express “the quintessence of terroir” (La Revue du Vin de France). They let the fruit do the talking. The result is a portfolio of Burgundies that are intensely flavoured, pure tasting, with excellent ageing potential. In 2023, they discarded 25% of their grapes which has taken quality even higher. Certainly one of the finest producers of Burgundy.

For 50 years Julien Bouchard dedicated himself to making some of the finest wines in Burgundy. In 1955, without anyone to leave his winery and vineyards to, he chose Albert Bichot to continue his legacy. A wise choice – Bichot has been rated Burgundy’s best producer of both the region's red and white wines, and a number of their releases have become great favourites with our customers. This is their fine, classic Chablis – top Chardonnay grapes lending lightly honeyed fruit and a bright minerality, with lees ageing for an extra layer of complexity. Rounded and well balanced, it’s one to serve cellar cool, in wide-bowled glasses with white meat dishes – creamy chicken pie or pork casserole – or panfried salmon.
