At Mount Mary they aim to make a Chardonnay of great length that is able to reach a balance between complexity & finesse. Unashamedly Burgundian in concept, local Yarra Valley practices are employed to fully express the unique terroir, including the wine not going through Malolactic fermentation as Mount Mary's cool-climate leaves the fruit with ideal acidity when picked. Matured in 20% new French barriques with the remainder in older barrels and large casks and along with grape solids, this is a Chardonnay of impressive texture and complexity.

Domaine Bonneau Du Martray

The Bonneau du Martray family is recognized as one of the best producers in the Corton appellation, and their Corton-Charlemagne is renowned as one of the benchmarks of the region. Produced from low-yielding vines, 16 different parcels of grapes are vinified separately in order for their respective "terroirs" to be reflected in the final wine. Fermentation begins in stainless steel and after 5 or 6 days is completed in cask. The separate cuvées are matured in one-third new oak barrels for 12 months before being assembled and returned to cask for another 6 months prior to being bottled.

Domaine Michelot Meursault Les Narvaux

This parcel is located on the upper slopes above the Meursault 1er Cru Genevrières appellation. The clay/limestone soil has a subsoil of extremely hard white rock riddled with fissures. These allow the roots to circulate through the white limestone. The parcels southern exposure, coupled with a steady 20% slope, affords the grapes excellent ventilation leading to a harvest that is both ripe and healthy. The wine often presents aromas of candied orange (or other citrus fruits) on the nose and in the mouth.

Domaine Roux Saint-Aubin 1er Cru Jadis Blanc

This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. This is a wine with real breeding.
