Taittinger Comtes de Champagne is the finest expression of the world famous wine from one of the greatest Champagne Houses. First produced in 1952, Comtes is made from 100% Chardonnay grapes from 6 Grand Cru sites in the Cité de Blancs. Showing a pristine pale yellow colour with very light, abundant bubbles which rise uniformly to form a fine mousse. The evocative bouquet opens with notes of pears and fresh cute white flowers. Left in the glass for a time, the nose develops a richness and density of pure character. Delamotte was found in 1760 and is one of the five oldest Champagne houses. This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

This Premier Cru is found mid-slope on the border between Meursault and Puligny-Montrachet. The slope is very regular at between 3% and 6% and the soil is clay/limestone with red earth. The subsoil is a mixture of earth and flat volcanic rock which allows an extensive root system to develop. These conditions bring finesse and a touch of minerality to the wine.
