The dark fruit aromas are underpinned by developing earthy characters, with spice and a hint of minerality. The palate shows plenty of power and concentration as the fruit unfolds, with big soft tannins, so typical from this site, and the iron-like sanguine finish. Ironheart represents the most eloquent expression of Shiraz from our Estate, grown on the most elite Shiraz block which we refer to simply as Block 15. The name Ironheart speaks to the reddish ironstone soils of this unique site. As with all of our wines, we use open-top fermenters, natural yeast fermentation and employ a careful regime of plunging, drain and returns to get the right balance of extraction. We fill 25% of the fermenter with whole clusters which adds some texture and complexity. Cuveé Aux Antipodes is the meeting of two winemakers from the two hemispheres. The old world represented by François Millet of Chambolle-Musigny, Burgundy, where he has made wine since 1986. The new world, by the site - the Prophet's Rock Home Vineyard in Central Otago, and its winemaker Paul Pujol.

For over four generations, the Catena family has grown vines in the foothills of the Andes Mountains in Mendoza, Argentina. In his pursuit to make wines that stand with the best in the world, Nicolas Catena identified the best lots and rows, in the Catena family's estate vineyards. In 1898, Nicola Catena left his homeland of Italy, and sailed for the land of plenty and opportunity: Argentina. It wasn't long before Nicola planted his first Malbec vineyard in Mendoza in 1902. Although traditionally used as a blending grape in Bordeaux, Nicola believed in the potential of Malbec as a single varietal wine, and suspected that it might uncover its hidden splendour in the cooler climes of the Andes. Flash forward a few decades, to where Nicola's grandson, Nicolas Catena Zapata, has taken over the management of the business. He sold off the bulk producing parts of the company, focusing instead on producing premium Mlabec and Cabernet. To that end, he began searching for the best sites in Mendoza to plant. In 1992, he settled on Gualtallary Alto - the highest and moste Western part of Tupungato. Today, the wines of Bodega Catena Zapata are sourced from six historic estate vineyards: Angélica, La Pirámide, Nicasia, Domingo, Adrianna and Angélica Sur.

His son Roberto succeeded him, but it was Robertos daughter Paola, on her return from Milano to Dogliani at the end of the 1980s, who with tenacity, enthusiasm and significant investment, re-launched this historic brand and went about improving wine quality. Today it is her son, fourth generation Matteo Sardagna, who is at the helm. Long sojourns in the Langhe as a child with his grandfather and mother left Matteo with a deeply-rooted passion for the familys values and customs. Today the winery is equipped with unique cement egg-like fermenting tanks, and botti of varying sizes and age so that Matteo and his team can produce wines which reflect their terroir, and the traditional style of the region and the estate.

This amazing tequila is made using centuries old, traditional methods that have been passed down the generations. The outcome is a tequila which is unequalled in taste and smoothness.
