Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. The simple act of marking barrels with spots of coloured paint would not only signify their age potential, but would become the namesake for this coveted whiskey, bonded and bottled by The Mitchells – a seventh generation family business. As a Single Pot Still Whiskey, these Spot Whiskeys are made using a unique combination of both malted and unmalted barley. This leads to that silky mouthfeel and the pot still spices that these whiskeys were so renowned for back in the old days. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.

To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

The guiding principles of blending are the achievement of harmony and consistency. The White Foil blend is traditionally composed from around 80 still base wines, drawn from different vineyard sites (crus), grape varieties and vintage years. The blend contains approximately one third of each three grape varieties of Champagne. Pinot Noir contributes body, depth of character and life extending tannins, Pinot Meunier adds youthful freshness, vigour and plump fruit character while Chardonnay gibes lightness, elegance and firmness.

A collaboration with renowned pastry chef Jordi Roca of three Michelin star restaurant El Celler de Can Roca, this release brings the worlds of chocolate and whisky to life. To create the first limited edition whisky in a new annual release series, The Macallan Whisky Maker Polly Logan embarked on a unique journey to Girona, Spain, where she immersed herself in the world of chocolate, exploring the chocolate-making process and uncovering the distinctive flavour profiles at Casa Cacao. Polly worked with Jordi Roca, owner of the famed chocolate boutique and hotel, Casa Cacao and the youngest of the acclaimed Roca brothers. As part of the exploration, she also spent time with master chocolatier of Casa Cacao, Damien Allsop.
