Conceived as an exchange and shaped by friendship, this wine is first and foremost a result of the free-thinking that came out of a meeting between Louis Roederer’s CEO Frédéric Rouzaud, his cellar master Jean-Baptiste Lécaillon and the designer Philippe Starck. Their conversations led to the creation of the very first Brut Nature in 2006 and the relationship continued to grow over the years to give us the 2009 and 2012 vintages. The Brut Nature was born from an idea of the dreamed-for, perfect champagne. It is a wine that captures the freshness of the clay soils in a sunny year, a wine of truth, the testimony to an encounter, a soil, a year, free spirits and the independent spirit that runs through the Champagne House. It is a champagne that perfectly encapsulates this new exploration of a Louis Roederer terroir. The Louis Roederer et Philippe Starck Brut Nature 2015 has a yellow hue with shimmering highlights and an even flow of lively bubbles. The bouquet is pure, elegant, vertical, rich and concentrated. Nuances of ripe fruit combined with exceptional finesse: fine, delicate citrus peel and vanilla along with warmer notes of baked apple and Tarte Tatin that gradually give way to aromas of nougat. The palate offers a marked and singular contrast: it is very expressionist thanks to the broad, juicy, almost sensual texture of the clay soils in a sunny year, yet distinctly minimalist due to a fresh, pure, mineral and mouth watering backbone associated with its zero dosage. Ripe citrus fruit combines with warm stone notes further accentuating the mouth watering, umami sensation. The finish is light, energetic and ethereal.
Benromach Heritage 40 Year Old Single Malt Scotch Whisky ( Release)
Owned by a family of whisky lovers, Benromach is a traditional Speyside distillery keeping things simple. Their small team of distillers rely entirely on their sense and expertise to create the finest handmade whisky. The 2022 release of Benromach 40 Year Old was bottled at a cask strength of 57.6%, this rare single malt whisky is natural in colour and was laid down in 1981 before spending four decades maturing in the finest first-fill Oloroso sherry casks. Aromas of cinnamon, ginger, Seville orange, roasted hazelnut and stewed red berries fill the nose. The palate offers notes of Morello cherries, baked apple, liquorice, dark chocolate, fruit cake and black pepper, with hints of dark berries and rich oak lingering in the finish. Only 1,132 bottles produced of this limited release.
Domaine Pierre Usseglio et Fils Chateauneuf-du-Pape Cuvee de mon Aieul
Domaine Pierre Usseglio et Fils is located in the village of Châteauneuf du Pape, has built a solid reputation over the years as producing rich, ripe red wines, so it's interesting to see that Thierry Usseglio and his son, Gregory, are experimenting with the use of whole bunches and an entirely new wine style that combines a large proportion of white grapes and use of amphorae. 100% Grenache from vineyards in Les Serres, Les Bédines and La Crau. Partially destemmed with 3-5 week concrete vat vinification, with aging occurring in aged 80-90% concrete vats and 10-20% oak casks for 12-14 months.
Michter's US*1 American Whiskey
The Michter's "US 1" bottlings are so named to honour Michter’s heritage. The brand was established in 1753 as America’s first whiskey company. Washington and his troops drank Michter’s while they were hunkered down in Valley Forge. Unlike Bourbon or Rye, which, by definition, must be aged in new oak barrels, our US1 Unblended American Whiskey is aged in a way that utilizes whiskey-soaked barrels to achieve a rich and unique flavor profile. In late 2013, then Master Distiller Willie Pratt agreed to re- release our US1 Unblended American Whiskey after a nearly three- year absence from the market, deeming it "just right" and "the best it's ever been." Crucially, our US1 Unblended American Whiskey never contains grain neutral spirits - hence its "unblended" distinction. This Whiskey has deep butterscotch and vanilla notes, hints of caramel and dried fruit with a ripened fruit finish.
Akkeshi Taisho Blended Japanese Whisky ( Bottling)
Akkeshi began distilling in 2016, based in the Akkeshi District of Hokkaido, the concept of distilling and maturing single malt in Japan’s northern wilderness traces back to the very first plans of Masataka Taketsuru, a pioneer of the country’s early whisky production. Taisho is the 12th of the 24 Japanese solar terms. The hottest period of the year, this is a celebratory time with many festivals and fireworks. The indigo label is inspired by yukata, the light summer kimono worn during the warmer months. As always, the exact production details are difficult to pin down, but the key malt is 100% from Hokkaido aged in a variety of casks including Mizunara and Bourbon, alongside imported grain purchased as new make and aged completely in-house (nine separate components contributed to the blend) This is signature Akkeshi, with fresh yet savoury/saline peatiness positioned at the forefront. A hot-blooded blend, this changes constantly in the glass and is best without water. Secondary notes of spun sugar and tropical fruit are joined by deep citrus, burnt sage and green almond notes in the mouth. It finishes spicy, salty and long.

Château Mont-Redon will be familiar to those who know and love Châteauneuf-du-Pape being well recognized as the owners of one of the most highly regarded vineyard sites in the appellation. The superb quality of its vineyards has been recognized throughout history and prior to the adaptation of the appellation controlee system it was one of the few ‘Grand Crus’ in the region (together with Chateau Rayas). Made in small volumes only in the best years, Château Mont-Redon Châteauneuf-du-Pape Le Plateau de Mont-Redon 2016 comes from plots chosen on the high plateau of galets roules. This wine is made from the very first parcels of vines planted when the family purchased Mont-Redon back in 1923, from a superb plot of very stony soils planted solely to syrah and grenache when the estate was first starting its journey of recovery back from the devastation of phylloxera.

Sullivans Cove Old & Rare American Oak Second Fill Single Single Malt Whisky (TD0079)
Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. And the way the oak develops during the finish, just when you don’t want to let go, keeping the show going; it brings another season to binge on, and we love it.
