Akkeshi began distilling in 2016, based in the Akkeshi District of Hokkaido, the concept of distilling and maturing single malt in Japan’s northern wilderness traces back to the very first plans of Masataka Taketsuru, a pioneer of the country’s early whisky production. Taisho is the 12th of the 24 Japanese solar terms. The hottest period of the year, this is a celebratory time with many festivals and fireworks. The indigo label is inspired by yukata, the light summer kimono worn during the warmer months. As always, the exact production details are difficult to pin down, but the key malt is 100% from Hokkaido aged in a variety of casks including Mizunara and Bourbon, alongside imported grain purchased as new make and aged completely in-house (nine separate components contributed to the blend) This is signature Akkeshi, with fresh yet savoury/saline peatiness positioned at the forefront. A hot-blooded blend, this changes constantly in the glass and is best without water. Secondary notes of spun sugar and tropical fruit are joined by deep citrus, burnt sage and green almond notes in the mouth. It finishes spicy, salty and long.

Château Mont-Redon will be familiar to those who know and love Châteauneuf-du-Pape being well recognized as the owners of one of the most highly regarded vineyard sites in the appellation. The superb quality of its vineyards has been recognized throughout history and prior to the adaptation of the appellation controlee system it was one of the few ‘Grand Crus’ in the region (together with Chateau Rayas). Made in small volumes only in the best years, Château Mont-Redon Châteauneuf-du-Pape Le Plateau de Mont-Redon 2016 comes from plots chosen on the high plateau of galets roules. This wine is made from the very first parcels of vines planted when the family purchased Mont-Redon back in 1923, from a superb plot of very stony soils planted solely to syrah and grenache when the estate was first starting its journey of recovery back from the devastation of phylloxera.

Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. As a Single Pot Still Whiskey, these Spot Whiskeys are made using a unique combination of both malted and unmalted barley. This leads to that silky mouthfeel and the pot still spices that these whiskeys were so renowned for back in the old days. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.

The blend is 100% Chardonnay from various years (20 to 25% of which are reserve wines from the 2 previous years). The nose is powerfully reminiscent of fresh fruits with dominant notes of citrus and exotic fruits, followed by a touch of jasmine, white peaches and pink peppercorns. A perfect champagne for aperitifs, particularly in spring and summer. It is an excellent complement to seafood and shellfish; perfect with a sea bass or bream tartare. The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. The GlenAllachie Distillery continues to innovate, releasing a 15-year-old whisky in April 2022 and a celebratory trilogy of Speyside Single Malts in honour of Billy Walker's 50-year career. The GlenAllachie 10 Year Old Chinquapin Oak Single Malt Scotch Whisky 700ml is an exceptional malt from Batch 2 of the Virgin Oak Series. It was first matured in American oak ex-Bourbon barrels before undergoing additional maturation in casks made of Chinquapin Oak (Quercus Muehlenbergii) for approximately 18 months. The casks were air dried for almost four years and then toasted to a medium level before hosting the spirit. The result is a complex and zesty malt with a rich bronze color, bursting with runny honey, sweet cinnamon and orange peel. Bottled at 48% and with natural colour and non-chill filtration, this malt offers a unique tasting experience. On the nose, it bursts with orange zest, heather honey and pecan, with notes of butterscotch, nutmeg and liquorice. Stewart M.B.E.’s creativity and inventiveness, when he created The Balvenie Classic – and in doing so, pioneered wood finishing. Aromatic and lively, aromas of vanilla and spice evocative of dried clove and chai are layered on a base of earthly, malty undertones reminiscent of Balvenie’s own barley loft. On the palate there is a perfect complement of light oatmeal syrupiness and brittle toffee are followed by delicate hints of spice and a rich drying sensation from European oak.

This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. This is a wine with real breeding.

Conceived as an exchange and shaped by friendship, this wine is first and foremost a result of the free-thinking that came out of a meeting between Louis Roederer’s CEO Frédéric Rouzaud, his cellar master Jean-Baptiste Lécaillon and the designer Philippe Starck. Their conversations led to the creation of the very first Brut Nature in 2006 and the relationship continued to grow over the years to give us the 2009 and 2012 vintages. The Brut Nature was born from an idea of the dreamed-for, perfect champagne. It is a wine that captures the freshness of the clay soils in a sunny year, a wine of truth, the testimony to an encounter, a soil, a year, free spirits and the independent spirit that runs through the Champagne House. It is a champagne that perfectly encapsulates this new exploration of a Louis Roederer terroir. The Louis Roederer et Philippe Starck Brut Nature 2015 has a pink hue with bright, fresh tints and generous, slow moving bubbles. The deep Pinot noir bouquet is a blend of delicate citrus notes, red fruit and spice. After aeration, the red fruit becomes intertwined with notes of honey and gingerbread. On entry, the wine is juicy, fruity, concentrated and palate coating. The sun-drenched fruit and its slightly sweet texture give one the impression of biting into a perfectly ripe blackberry. The wine shows remarkable poise thanks to the sensual, almost powdery texture that balances the zero dosage. The end palate reveals slightly spicy, smoky and iodised notes that usher in a sensation of Umami.
