Glenfiddich 30 Year Old 'Suspended Time' Single Malt Scotch Whisky
The Glenfiddich Distillery was founded in 1886 by William Grant in Dufftown in the Speyside region of Scotland. The name Glenfiddich derives from the Scottish Gaelic Gleann Fhiodhaich meaning "valley of the deer". Once the spirit has matured, the whisky is cut with pure Robbie Dhu spring water. Glenfiddich has a bottling hall onsite along with a large bottling plant in Bellshill. It is visible in a rocky valley’s many solid strata; laid down over millennia, worn smooth by wind and rain. And with layers comes complexity. Which is why Glenfiddich 40 is so much more than an exemplary single malt. This rare single malt is made through remnant vatting, a pioneering process in which the Glenfiddich malt master carries one batch over, time and again, and marries it with the casks selected for each subsequent release. Cask after cask, season after season, it absorbs the evolving flavours of the passing years. It is time, age, experience accumulated. It’s a unique process that isn’t commonly used. In fact, Glenfiddich is the only distillery that still makes use of the remnant vatting process, which is a testament to the label’s traditional approach to distillation. Part of the time reimagined series from Glenfiddich, the 30 year old release is know as suspended time. Time is often believed to be an irrefutable force. the seconds, minutes, hours fleeting figures of a clock face, slipping steadily away. but in the hands of a maverick, time stands still. This is something our malt master understands implicitly. Thirty years ago, he laid down the spirit to create an exemplary single malt. After three decades of patient maturation, the decisive moment arrived. Glenfiddich 30 is the pinnacle of this process. More than simply a superlative liquid, it is forethought, expectation, anticipation embodied. Three decades, captured. Time stilled, forever. Arrested, and arresting. An experience to savour. Thirty years of Glenfiddich's maverick mindset, suspended in time. Graphic and expressive, Glenfiddich 30 year old’s outer packaging is the capsule which encases the moment of maturation, in all its splendour. The design evokes the image of moving ribbons, each one frozen in time to form elegant cut-out windows, revealing the regal decanter inside. The design’s dynamic lines and complex structure create the illusion that the bottle is suspended, effortlessly, in mid-air. Rich Bronze in colour the nose is an exquisitely structured balance of hearty oak married with sweet, subtle sherry notes. On the palate you will find deep, woody flavours interlaced with delicate floral accents, in a complex combination. The finish is warm, honeyed and exceptionally long-lasting.

First released in the US and then rolled out internationally in 2023, the new packaging combines artistry and innovation with a reduced carbon footprint. Crafted from FSC-certified, sustainably sourced oak from France, the sleek wooden box is a testament to Hennessy's commitment to the environment. Weighing 1.5 kg less than its predecessor, it reduces the carbon footprint while paying homage to the oak barrels that nurture the cognac to perfection. The new design of the box features a detachable podium that elevates the Paradis vessel to highlight the fluid lines of the decanter. With its sophisticated, sensuous shape, the decanter that sits within the oak box resembles angel wings—an indication of the heavenly nature of the liquid within it. While the packaging is elevated to new forms, the Hennessy Paradis stays true to its much-loved characteristics—the cognac exudes floral characters of rose and jasmine, accented with notes of exotic fruit and cinnamon on the nose. The rich, copper-hued Hennessy is silky on the palate, smooth and flavourful with a deep, persistent finish, and a voluptuous aroma that lingers on after the perfect sip. Hennessy Paradis was created by Maurice Fillioux in 1979 as a tribute to his love of music. He compared the blend to ‘a symphonic orchestra’, as “classical music that takes you away and connects with your emotions.” The number of instruments in an orchestra is not necessarily a measure of its success, but rather the purity of sound it creates and the virtuosity of the conductor. The same holds true for Hennessy Paradis, a union of exceptional eaux-de-vie selected for their individual qualities that together create a harmonious and graceful cognac. Distinctive for its graceful character and immediately delights with its rich copper colour. A perfectly balanced blend, both voluptuous and round, it combines smoothness and strength with a silky texture. Naturally, it has a flavourful and deep, persistent finish. Maker: Maison Hennessy is a distinguished cognac producer with a rich legacy that dates back to its founding in 1765 by Richard Hennessy, an Irish officer in the service of the King of France. Over the centuries, Hennessy has evolved into an unrivaled market leader and the world's foremost premium spirits brand, with a global presence in 160 countries. Based in Cognac, France, Maison Hennessy is known for its long-standing tradition of savoir-faire, which has been instrumental in creating a wide range of exquisite cognac products. The expertise of master blenders at Hennessy has contributed to the brand's reputation for excellence and quality in the industry. In addition to its exceptional cognac offerings, Hennessy engages in artistic collaborations, offers exclusive products and cocktails. Laurent Boillot, serving as the CEO, leads the company in maintaining its commitment to quality and innovation. Maison Hennessy's enduring legacy, unwavering commitment to quality and global influence have firmly established the brand as a symbol of excellence in the cognac industry. With its rich history and dedication to innovation, Hennessy continues to set the standard for exceptional cognac production and remains a celebrated figure in the world of premium spirits. In perpetuating the legacy of the original Hennessy V.S.O.P cognac specially conceived by Hennessy in 1817 for the English Prince Regent, who would become George IV the objective of the Hennessy master blenders has always been to create a complete and harmonious blend: the definitive expression of a perfectly balanced cognac. The mellow texture of its oldest eaux-de-vie perfectly complements the vitality of the youngest, which makes it ideal for any occasion, whether enjoyed on the rocks, as a long drink or in a more creative mix. Philosophy: The journey from grape to bottle in Hennessy cognac production is a meticulous process involving several key stages. It all starts with the careful selection of Ugni Blanc grapes from the Cognac region, known for their high acidity and low alcohol content. In fact, A spirit that bears the Cognac Protected Appellation of origin (PDO) has to comply with regulated specifications, its grapes must be grown in Cognac, and the wine made from them produced here, defined by strict borders surrounding the Charente River. Seems pedantic but you can taste the difference. After harvest, the grapes are pressed, and the juice undergoes fermentation to become a low-alcohol wine. This wine is then distilled twice in copper stills, a crucial step that concentrates its flavours and aromas. Double distillation is required to make eaux-de-vie for cognac. In the first, a raw spirit called “brouillis” is produced. The second distillation produces a much higher alcohol content. Only the middle part, the ‘heart’, is saved. This clear, colourless liquid is called eaux-de-vie. It takes approximately 12kg of grapes to obtain 1 litre of eaux-de-vie. Pressing the grapes produces 9 litres of wine. The resulting eaux-de-vie is aged in French oak barrels, where it matures and develops complexity over time. Hennessy's master blenders then skillfully blend eaux-de-vie of different ages and characteristics to create the desired flavour profile for each cognac expression. Once blended, the cognac is aged further to allow the flavors to harmonise before being bottled. Throughout the entire process, from grape to bottle, Hennessy maintains a commitment to quality and craftsmanship, ensuring that each bottle of cognac meets their exacting standards. For two centuries now, Hennessy's tasting committee has met every day at 11am. They meticulously taste each eaux-de-vie, then select or reject it according to their strict quality standards. The ones selected will be tasted at least once a year to ensure their maturation process follows a standard and style. The result is a range of cognacs renowned for their rich flavours, complexity, and smoothness, enjoyed by connoisseurs around the world. Nose - Dry Roses, Cinnamon, Exotic Fruits On the nose, this blend exudes floral notes and jasmine, underpinned by delicate notes of cinnamon and exotic fruit. Palate -Acacia Honey, Dehydrated Citrus, Pepper A graceful, silky texture leads to a flavourful and deep, persistent finish. Finish - Fresh Flowers, Dried Fruits, Candied Citrus Peels The finish is long and warming and very rounded.

This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. Balvenie 25 Year Old Rare Marriages Single Malt Scotch Whisky
Product Information: For this range, malt master Kelsey McKechnie has made a small selection of our rarest casks, each of exceptional quality and unique individual flavour to bring together in a tun marriage. The Balvenie 25-year-old is blended from a combination of whiskies matured in traditional American oak and European Sherry oak casks. It has extraordinary depth, the perfect balance to create the most elegantly fruity whisky expression the Twenty-Five hints at the most sought-after Balvenie flavours – bold vanilla oak, crystallised ginger and sweet runny honey. The nose has a distinct honeyed sweetness with hints of brown sugar. Ripe fruits ranging from apple, pear to tropical aromas of mango and pineapple. Mint, anise and ginger accents. Seasoned oak in the background. Smooth and creamy on the palate. Baked apple notes, hints of tropical fruits. There is also a bit of liquorice and a pronounced flavour of baked cinnamon. A persistent fruit finish that lingers with cinnamon and a hint of nutmeg. Super. Maker: William Grant’s vision for Balvenie, established in 1892, was to transform the abandoned shell of an 18th-century manor house into a thriving whisky production facility. Neighbouring his successful Glenfiddich distillery, Grant used second-hand stills from Lagavulin and Glen Albyn to set up Balvenie, establishing a unique character for his new venture. Today, Balvenie’s impressive craftsmanship continues to set it apart. The distillery operates with four wash stills and five spirit stills, which, though of similar dimensions as those at Glenfiddich, are taller. This height difference imparts a distinct style to Balvenie’s whisky, contributing to a richer and more nuanced profile compared to its neighbouring distillery. A standout feature of The Balvenie is its commitment to traditional methods. Unlike many modern distilleries, Balvenie still practices floor malting, a time-honoured technique that involves spreading barley on the floor to germinate. This traditional process is complemented by the use of an on-site kiln for malting and peating, with barley grown on the distillery’s own farm, Balvenie Mains. This dedication to maintaining traditional practices ensures that each bottle of Balvenie whisky carries a deep sense of heritage and authenticity. The Balvenie’s unique approach combines time-honoured techniques with innovative practices, such as the pioneering ‘finishing’ method introduced by Malt Master David C. Stewart MBE. This blend of tradition and innovation results in a range of whiskies that are both distinct and exceptional, reflecting the rich history and enduring legacy of The Balvenie Distillery. The Philosophy: The Balvenie distillery is a paragon of tradition and expertise, with a deep-rooted commitment to crafting exceptional whisky. This dedication is evident in every aspect of their production process, reflecting a blend of time-honoured practices and modern skill. Unique among Scottish Highlands distilleries, The Balvenie grows and malts a portion of its own barley. This tradition, carried forward by James Wiseman and his son Duncan, ensures that generations of knowledge contribute to the whisky's distinctive quality. The Wiseman family's involvement in barley farming spans decades, underpinning the distillery’s legacy. The art of cooperage is another cornerstone of The Balvenie's approach. Master cooper Ian McDonald, with 54 years at the distillery, exemplifies the craftsmanship required to repair and rebuild casks, a skill developed over years of experience, Ian shares, "I've been working with wood for so long that I know American Oak from European by feel." Also labour intensive is the malting floor, where malt men manually turn barley up to four times a day, and the precise use of peat in the kiln, add layers of complexity to the whisky. The distillery’s copper stills are instrumental in shaping its flavour. Dennis McBain's expertise in copper smithing, alongside his apprentice George Singer, ensures that the intricate design of the stills contributes to the signature honeyed notes of The Balvenie. Former Malt Master David C. Stewart, who dedicated 60 years to The Balvenie, revolutionised whisky production with his pioneering techniques, particularly around ‘cask finishes’. In 2023, Stewart passed the mantle to Kelsey McKechnie, recognising her exceptional talent and commitment. Stewart’s legacy continues through McKechnie, ensuring The Balvenie’s tradition of excellence endures. Nose - Runny Honey, Oaky Char, Candied Orange Peel Honeyed sweetness with hints of brown sugar and orange peel. Then ripe orchard fruit, apple, pear, and some tropical fruit aromas of mango and pineapple. Palate - Toasted Marshmallows, Fruit Terrine, Vanilla Oak The initial bold vanilla oak flavours slowly dissipate to reveal layers of toasted marshmallows, fresh fruit terrine and cinnamon-infused apple tart. Finish - Cinnamon Dusted Apple Tart, Apricots, Nutmeg The finish is long, with a lingering fruity sweetness, accompanied by cinnamon and a hint of nutmeg.

Maker: In 1994, on remote island at the far end of the world, a distillery was brought to life from humble beginnings. Away from the whisky establishment, Sullivans Cove were free to explore and perfect their process. Informed by the past and inspired by possible. Bringing a distinctly Tasmanian twist to a whisky craft, shaped by centuries of practice. 20 years later, their commitment to carefully crafting exceptional whisky, inspired by nature and patiently aged, was rewarded when Sullivans Cove was named the World’s Best Whisky. Overnight the secret was out. Special things were quietly happening on this small 'Apple Isle', and whisky lovers globally were intrigued. In a world of instant gratification and impatient consumption, Sullivans Cove offer an alternative. Genuinely rare whisky which can’t be rushed, and which can never be replicated. Philosophy: Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good water and good grain is the foundation of all high-end whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Vanilla Cream, Cashew Nuts, Honey Quite the attention grabber! Starting off with fresh green apples and a whole lot of American oak. Initially, the oak profile is on the tight side, but with air it loosens and begins to express its buttery sweet self – cashew nuts in honey, sponge cake and vanilla cream. At the same time as the oak profile is unfolding, so is the bounty of Sullivans Cove spirit character – incredibly fruity and citrusy with mango, guava, kiwi and cantaloupe. A delicious and brilliant complimentary array of flavours. Palate - Lemon Curd, Chamomile, Cocoa Powder Wow, incredible texture and presence. Thick and waxy spirit simply bursting with candied ginger, deep chamomile, daisies and Dutch cocoa powder. The structure and body are both full and broad, initially oak-driven, but now coming into perfect balance as the spirit expresses sweet citrus and salted cantaloupe, filling out the mid-section. Wafers and sponge cake come next (with berry jam this time!), and the palate continues to unfold with orange sherbet, Turkish delight, more Dutch cocoa powder and a beautiful bright herbal and floral layer. Finish - Chocolatey, Warm Citrus, Savoury Notes Leading the finish is the rich, chocolaty side of American oak, swiftly accompanied by the delightful warmth of citrus and fruity notes, particularly guava, reminiscent of the nose. As the finish unfolds, the herbal and bright elements intensify, and impressions of watermelon candies, daisy stems, subtle savoury hints akin to a hot chocolate stout, all rest upon a broad structure supported by beautifully firm tannins.
