The 2023 release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts. The casks used to finish this exceptional dram were specially selected by Dalmore’s Richard Paterson. They rested for decades at González Byass in Jerez, where they were used to mature 30-year-old Matusalem Olorosso Sherry, before making the long journey to the Scottish Highlands. This is not the easiest way to source a whisky cask, but the extra effort makes perfect sense when the Dalmore 21 Year Old hits your glass. Seville oranges, bitter chocolate and Colombian coffee tantalise on the nose, while sweet liquorice, black forest fruits and roasted walnuts delight the palate, finishing with notes of peaches, ginseng and pear tarte tatin.

Philosophy: The journey from grape to bottle in Hennessy cognac production is a meticulous process involving several key stages. It all starts with the careful selection of Ugni Blanc grapes from the Cognac region, known for their high acidity and low alcohol content. In fact, A spirit that bears the Cognac Protected Appellation of origin (PDO) has to comply with regulated specifications, its grapes must be grown in Cognac, and the wine made from them produced here, defined by strict borders surrounding the Charente River. Seems pedantic but you can taste the difference. After harvest, the grapes are pressed, and the juice undergoes fermentation to become a low-alcohol wine. This wine is then distilled twice in copper stills, a crucial step that concentrates its flavours and aromas. Double distillation is required to make eaux-de-vie for cognac. In the first, a raw spirit called “brouillis” is produced. The second distillation produces a much higher alcohol content. Only the middle part, the ‘heart’, is saved. This clear, colourless liquid is called eaux-de-vie. It takes approximately 12kg of grapes to obtain 1 litre of eaux-de-vie. Pressing the grapes produces 9 litres of wine. The resulting eaux-de-vie is aged in French oak barrels, where it matures and develops complexity over time. Hennessy's master blenders then skillfully blend eaux-de-vie of different ages and characteristics to create the desired flavour profile for each cognac expression. Once blended, the cognac is aged further to allow the flavors to harmonise before being bottled. Tasting Notes APPEARANCE Deep gold with amber lights. Good beading. NOSE A mellow, rounded, nose with some prickle. The first impression is of rich, dried fruits, and beneath this fresh-baked buttered scones, perhaps spread with lime marmalade. Soon this becomes lightly savoury and meaty but retains a slight citric note. A drop of water modifies the latter and reduces the aroma. BODY Medium to full. PALATE At natural strength, mild for its strength and super-smooth in texture, while the wonderfully rich mouth-filling taste is immediately sweet overall with dried fruits, then intense and savoury with a surprising kick of chilli pepper as it goes down. Magnificently feral and delicious. Drying overall, with rich tannins. Similar with a dash of water, which raises a little more sweet, spiced fruit. FINISH Seemingly endless and deeply impressive, with the fruit and savoury notes in perfect agreement and a warming glow spreading across the palate. Finally leaving the palate dry, yet still wreathed in a glorious rich afterglow.
