Back in 1931, the Dennery Distillery was founded in St. Lucia. This year is honoured by St. Lucia Distillers (who were formed by the merger of the Dennery Distillery and other distillery in 1972) with the 1931 series of top notch rums! This is the Fourth Edition from the series.

Clase Azul Reposado is an ultra-premium reposado tequila made with Tequilana Weber Blue Agave that is slow cooked in traditional stone ovens for a minimum of 72 hours. Once the agave reaches a deep, rich flavor, it is fermented with proprietary yeast prior to distillation. Once the tequila is distilled, it is aged for 8 months in hand-selected oak barrels. This process results in a superb, smooth taste which exceeds expectations with each sip. Domfrontais Calvadoss differ from those of the PaysdAuge by being made from at least 30% pears, as well as the traditional apples. This makes not only for a lighter-coloured spirit, but also one thats more feminine and elegant. This 1992 vintage Cavados has aromas of cocoa, pear, tea and jasmine. The palate is elegant and long with pear and spicy notes.

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.

Clement LElixir comes from the blend of rums aged 6 years. A vintage that has aromatic characteristics. An abundance of delicately woody notes and the playfulness of spicy flavours sign the general aromatic profile of this vintage. The scents of cinnamon coexist with those of dry dates. Gingerbread and mocha punctuate the tasting of an exquisite gourmandise.
