Taittinger Brut Réserve Champagne Non-Vintage

Pommery Grand Vintage Champagne

Only fruit from 7 Grand Cru vineyards is used to craft a blend of equal parts Pinot Noir and Chardonnay, which spends over 4 years ageing on lees plus 6 months post disgorgement. Further gentle ageing takes place until deemed ready for release by the Cellar Master. It displays mature citrus characters, fresh white and red fruits and gentle spice, all linked by a common thread of minerality producing complexity, elegance and length.

Pol Roger Brut

Louis Roederer Blanc de Blanc

Louis Roederer remains one of the last 100% independent, family-owned Champagne Houses, presided over by seventh generation Frédéric Rouzaud. Under the stewardship of Chef du Cave, Jean-Baptiste Lécaillon these past two decades, Louis Roederer has become the largest Biodynamic Domaine in Champagne with their 242 hectares located in the three most important sub-regions: Montagne de Reims (La Montagne); Vallée de la Marne (La Rivière) and Côtes des Blancs (La Côte). In March 2021, following 20 years of environmental transition, 115 hectares of the historic Louis Roederer family vineyard achieved organic certification. An extraordinary vintage which is also the year in which the Champagne region was recognised as a UNESCO World Heritage Site! 2015 followed the continental trend of that decade: a mild, wet winter and a hot, dry summer. The summer, hot and sunny, brought record-breaking temperatures and water stress. The second half of August brought some very welcome rain, giving the vines some much needed relief. Thanks to this fresh finish, the vines produced juicy, ripe and concentrated grapes. Roederer's ambition for this vintage? To capture the concentration which is the hallmark of this spectacular vintage! Bright yellow hue with slightly green tints and bubbles that are soft, creamy, fine and delicate. The bouquet is precise and mineral with notes of ripe citrus fruit and white, almost vanilla-like blossoms (pollen) and notes of freshly harvested wheat and almonds. The freshness of the bouquet comes through in the form of minty and iodised aromas (sea spray) which slowly evolve towards warmer notes of smoke, hot butter and toast. The palate is creamy and soft yet concentrated on entry. The wine, underpinned by the delicate bubbles, unfolds majestically. It offers us the sensation of ripe, concentrated juice carried by an incredibly powdery texture with a distinctly saline finish. Oaky and smoky notes continue to draw out the wine, giving it extra length and concentration, an indication of its exceptional cellar-ageing potential. The finish is pure, refreshing and mouthwatering.

Bollinger PN AYC 18 Champagne

Since 1829, Champagne Bollinger has been making great wines with a powerful, refined and complex style. The Bollinger style is instantly recognised as such by connoisseurs, the fruit of rigorous methods and a respect for principles handed down from one generation to the next in a great tradition that has always valued experience above all. This style expresses the aromas of the fruit in all its dimensions. Bollinger wines release a creamy effervescence resulting from vinifying in oak barrels and prolonged contact with the yeasts. They guarantee a unique tasting experience that always offers something new. Over the years, Bollinger has built its vineyards at the heart of the finest crus in Champagne. Champagne Bollinger’s 179 hectares of vines are made up of 85% Grand and Premier crus and are farmed by our teams of growers across 7 separate vineyards: Aÿ, Avenay, Tauxières, Louvois and Verzenay for pinot noir, around the Montagne de Reims, Cuis for chardonnay on the Côte des Blancs and Champvoisy for meunier in the Vallée de la Marne. The fourth edition of Bollinger PN, PN AYC 18 is a champagne with a distinct style that showcases the specificities of the Aÿ terroir, the principal cru in the blend, made predominantly from the 2018 base year. In Champagne, the 2018 vintage was characterised by abundant yields and an early harvest. Chalk moderated conditions in Grands Crus vineyards, resulting in particularly outstanding, very concentrated grapes with a natural average ripeness and powerful acidity. Pinot Noir is one of the key pillars of the Bollinger style and the Maison has built its reputation by showcasing this variety. The PN cuvée is the result of research into the different styles of Pinot Noir and its different origins in Champagne. PN is a continuation of the Maison’s heritage and an affirmation of the legendary Bollinger style, while also being a wine that reinvents itself year after year. In this way, each new edition offers a new interpretation of Maison Bollinger’s vineyards and savoir-faire. 100% Pinot Noir (Blanc de Noirs), principally from Aÿ, blended with other villages, predominantly Tauxières and Verzenay. With 2018 as the base year and the oldest vintage 2009 this cuvée was aged in the cellars for twice as long as stipulated by the Appellation. Golden in colour with bronze reflections the nose has notes of honey, fruit jellies , quince and candied citrus. Aromas of marzipan and blood orange complement a nose full of sweet spices and a refreshing hint of menthol. The palate is serious, understated and rich, beautifully expansive with a finish full of confit citrus which enhances the wine’s freshness. PN AYC18 is designed to be shared between wine enthusiasts looking for different expressions of Pinot Noir from Champagne. Bollinger recommend you serve PN AYC18 between 10 and 11°C to highlight its unique style and aromas. You can enjoy this wine right away or keep it in the cellar for further ageing.

Ayala Le Blanc de Blanc

Founded by Edmond De Ayala in 1860, the House Ayala possesses a remarkable history, rooted in the visionary spirit that resonates with its melodious name from distant lands. The name Ayala appears almost serendipitous, intricately tailored for the village of Aÿ, where the House has proudly stood since its inception. Edmond De Ayala, an inquisitive and bold personality, consistently pursued the path less travelled. Vibrant with the essence of excellence and a spirit of adventure, the House of Ayala continues to be inspired by the indomitable founder who paved its way. In contrast to the prevailing French tradition of dosage, which exceeded 150 g/L during that era, Edmond De Ayala took a bold and audacious move by unveiling "dry champagne" in 1865, with a mere 21 g/L dosage. As a true pioneer, he possessed a discerning vision to revolutionize the Champagne landscape by introducing a drier style, which has created a profound impact to the modern world. Through bespoke craftsmanship, House Ayala employs a tailored approach, working with a diverse selection of crus to achieve the utmost balance and skilfully express the exceptional terroir surrounding Chardonnay, the house's emblematic grape variety. Champagne Ayala relentlessly pursues the finest raw materials from the Champagne region and currently boasts a palette of 70 crus, with 50 of them dedicated to Chardonnay. These crus are sourced from the most esteemed terroirs of Champagne. This remarkable diversity, a distinctive feature of the house, contributes to the complexity and vibrant aromatic freshness found in their blends. The house maintains 20 hectares of their own vineyards, situated in esteemed locations such as the Montagne de Reims, encompassing Aÿ Grand Cru and Dizy, as well as the Côte des Blancs, including Chouilly and Oger, both classified as Grands Crus. Additionally, they have vineyards in Champvoisy and Passy-Grigny in the Vallée de la Marne. With an unwavering commitment to pure expression of the raw materials, Champagne Ayala is transitioning their vineyards to organic viticulture and has obtained HEV and VDC certifications. The House consistently fosters trusting relationships with winegrowers and supports them in their environmental endeavours. Elaborated in limited quantities, exceptionally during the most expressive years, Le Blanc de Blancs brings to the light all of the elegance and the purity from the Chardonnay of the Côte des Blancs. This terroir is home to the most beautiful Chardonnays with a great ageing potential, including three Grands Crus which form the fundamentals of the blend. Chouilly, the House’s own vineyard, complete and subtle, brings a silky texture, a freshness, and an aromatic diversity to the cuvée. Le Mesnil-sur-Oger brings the tension, the precision, and a beautiful ageing capacity, in perfect harmony with the chalky minerality of Cramant. A signature blend, enriched by a selection of remarkable Premiers Crus. Recognizable by its both pure and creamy style, Le Blanc de Blancs is a genuine ode to Chardonnay. The signature cuvée of Caroline Latrive. Ensuring a consistent style, she does not hide her love of Chardonnay, and gives it a central place in her blends. Brilliant and contemporary, this prestigious cuvée flourishes in a special bottle, promoting the development of the organoleptic profile during the 6 years of ageing on lees in the cellars. The ultimate epicurean aperitif, Le Blanc de Blancs 2016 also marvellously goes with a lemony sea bream ceviche, a prawn risotto, or a braised veal fondant with rosemary.
