Individual batch fermentation has provided a powerful bracing flavour, stunning vibrancy texture, and balance; and shows what can be achieved when this variety has everything is thrown at it.

No sulfur was added from the vineyard to the bottle. Keep cool and enjoy young. Rose petal and pink grapefruit on the nose. Juicy red apple and refreshing citrus flavors. Don’t let this little flower fool you, this is one serious Rose.

Will Gilbert’s Rosé is a blend of varietals, Sangiovese, Shiraz and Zinfandel. The wine is super light in colour, nice and dry whilst it still has loads of flavour!! Pink grapefruit citrus characters on the nose, with a palate packed full of pepperberry spice.

Crafted from a field blend of Nebbiolo, Cabernet Sauvignon, and Muscadelle, our 2022 Estate Grown Rosé embraces the traditional Italian method of co-fermentation, where the grapes are harvested and fermented together for a more integrated expression. The result is a beautifully dry and refreshing rosé, brimming with fresh fruit aromas, delicate strawberry notes, and a crisp, lively finish—a true pleasure to drink.

Cupio Spicy Rosé is a crisp dry Pinot Noir Rosé infused with real chillis with a bold and refreshing kick. Bursting with vibrant strawberries and watermelon, it’s layered with a subtle, daring spice that surprises the palate. It’s light and fresh with a heat that lingers just long enough.

The wine is dry and fresh with aromas of strawberry and cherry. It is a delightful seasonal drink suitable for any antipasti or grilled meat pairing.
