Grace Gris de Koshu
Koshu, Japanese indigenous Vitis Vinifera cultivation variety, is said to be a unique grape varietal in Asia. The character of Koshu is slight but pleasant bitterness originated from its pink grey skin. Fermented and aged in stainless steel tank. This wine goes well with sushi and cuisines using dashi. Brilliant pale yellow with green tone. White flower aroma with oranges such as navel orange. Smooth touch and rich fruit across the palate. From middle aroma to finish, subtle bitterness brings its distinctiveness.
Bernard Defaix Chablis
This wine is pale straw in colour and shows subtle grapefruit, mineral and flint characters on the nose. The palate has flavours of citrus and melon with savoury notes and a long dry finish.

Intense yellow colour with subtle tones olive shiny appearance. Exquisite aroma dominated by tropical fruits, citrus, coconut and nuts. A delicate and correct acidity giving a feeling of freshness. This Andeluna Altitud Chardonnay has a smooth, lingering finish. Serve at 9C. Aged in new French oak barrels for 12 months, followed by at least 8 months in bottle before release. Battonage (stirring of the lees) was carried out during the ageing process.

Domaine Bernard Defaix Petit Chablis
Defaix's Petit Chablis is drawn exclusively from Kimmeridgian-based soils unlike most Petit that generally comes from the low-lying sites on Portlandian limestone to the north of the commune. It's not necessarily the type of limestone but its location that makes the difference, with Defaix's small parcel being very well situated for this level, high on the slopes of Milly. With juicy apple and stone fruit aromas and flavours, pulpy texture, a vibrant, cool close, it's a wine "on the fruit" as the French would say. It reflects both the depth of the vintage and the cool soils of the region. Certified organic.'An expressive nose blends notes of iodine and sea breeze with those of a mix of yellow orchard fruit.
