It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Delicate and gentle notes of cooler climate fruits fill the nose; wet stones, chalk, fine citrus zest and orange blossom. The palate is lissom and has a mineral water like weight as citrus fruits mingle with toasted nut-meal and caramel. A fine and soft acidity retains levity and gives length and crispness to finish this Chardonnay by Marchand and Burch.

This exquisite Five Tales Sauvignon Blanc Semillon displays a pale straw colour with a bright green haze. The fragrant bouquet exudes lively aromas of tropical fruits, citrus and herbs, making way for a zesty and textured palate filled with intense citrus and tropical fruit flavours. These vibrant characters are balanced by crisp acidity, which leads this delightful white blend to a dry and refreshing finish. It has the potential to be cellared for 1 to 2 years from vintage. Suggested food pairings for this SSB include poached salmon, pan fried scallops and prawn ravioli.
