The 23rd Street distiller individually infuses ten botanicals including traditional juniper and coriander, complemented by zesty local citrus. What’s your whim? Say it with Gin. Our Violet Gin is the mood ring of beverages. Transform the broody blues of Butterfly Pea flower to ultraviolet with tonic. A bouquet of heady Australian native botanicals including lemon myrtle, finger lime and pepper berry abounds. On the palate, layers of intriguing flavour unfold, from familiar juniper to juicy finger lime, mellow wattle seed and lingering zest and peppery spice.

Originally from the West Perth based Hippocampus Distillery (launched in 2015), but now based in Melbourne and distilled by Boatrocker Brewers & Distillers and made in small batches, with 10 undisclosed botanicals in the mix, macerated overnight then distilled in a copper pot still. Tasting note: [Batch 9 tasted] Crystal clear. Spicy and fresh aromas of juniper, cardamom and cinnamon in the first pass with air contact emphasising lemon gelato, mineral and mandarine peel. Quite concentrated for the ABV with a lean, peppery juniper entry, followed by flavours of coriander seed, citrus peel and a warming spirit finish. Aftertaste of white pepper and juniper shows excellent staying power. 41.5% Alc./Vol.

Delving further into the abundance of native treasures at the Australian National Botanic Gardens, Ad Crescendum var Flosferam Native Gin continues our collaboration with the gardens. This gin is quintessentially Australian, representative of our native flora and highlighting the importance of conservation at the gardens. The nose is crisp and piney. A soft, bright and herbaceous beginning, with delicate floral notes across the tongue. Slight umami. Leads to rich and sweet bush honey notes to finish.
