Indgio Organic Grape Growers Collective Field Blend White
A cracking aromatic white blend that bursts with citrus, green herbs, with slight honeyed notes. The palate is bright but with time spent on lees it has built some weight and texture without compromising flavour. A vibrant fruit palate is balanced by a well judged line of acidity. This is a very satisfying and fuller flavoured fresh white wine, perfect with light seafood dishes or even roast pork belly with creamy mash.
Forester Estate Margaret River Lifestyle Brut Cuvee
Grape variety - Semillon 82%, Chenin Blanc 17%, Chardonnay 1%. Colour - Pale green - straw. Aroma - Fresh and fruit driven, displaying elegant characters of apple, pear, flint and fennel. There is a floral perfume along with subtle yeast lees complexity. Palate - Light and textured with a fine creamy texture. Pear, fennel, lime and honeydew melon dominate the clean and lively palate. A wine with great drinkability. Food matches - Fresh seafood and light poultry. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River. Direct input from Forester`s viticulturist ensures well balanced canopies and crops are grown for the desired fresh fruit driven style. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Grapes were harvested at a lower baume to achieve the delicate style. Winemaking - Modern white wine making techniques are employed in the production of the Brut Cuvee, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. A long cool fermentation follows, allowing for the retention of the delicate fruit characters in the base wine.

The name 'Nunc Tempus Est', meaning 'Now is the time', reflects the moment when this remarkable wine has come to fruition. The grapes for this wine were handpicked in the cool of the morning, gently pressed, and fermented under careful conditions to preserve the freshness and purity of the fruit. The wine was then matured in a combination of stainless steel and mature French oak barrels, ensuring a perfect balance of texture and complexity. Fresh and vibrant, this wine showcases a unique style of Chenin Blanc that is both bone-dry and deeply flavourful, with aromas and flavours of honey, straw, and apples. Highly perfumed with lavender, green olives in brine, mastic verging on the smell of just-cut raw pine wood. There’s a lot going here: textural with barely ripe Packham pears, raw quince flavour and phenolics with a slip of creaminess. Green apple, apricot, green pear, lemon myrtle and honey, a coverlet of spicy oak. It's juicy, lots of flavour here, but tight too, and the texture is excellent offering some chalky grip and glossy feel, and it sports a cinch of dried herb and quinine bitterness on a long finish.
