This Sauvignon Blanc was grown on the unique Limestone vineyards of Kfar Tabor in the Galilee. The 30 year old vineyards are carefully tended throughout the year. This wine shows an array of fruit characters, ranging from citrus through to tropical notes. This is complemented by some secondary characters from the natural yeast ferments and also some barrel aging. The palate has an elegant structure with a creamy, textural mid-palate and a long finish.

A percentage of the grapes were handpicked and whole bunch pressed, with about 20% seeing French oak, the majority well-seasoned. A small percentage worked through malo with a substantial amount of button age to build mouth feel. The colour is golden straw. An aroma complex nose with layers of stone fruit, mingling with brioche. The palate is full-bodied and richly textured with fleshy stone fruit. This is an elegant Chardonnay with a lingering, lively finish.

This is a concentrated Sauvignon Blanc in a typical Central Otago style. The wine displays wild gooseberry flavours intermingled with freshly cut hay and lemon notes; this moves into a full mid-palate and then the wine finishes with lingering passionfruit and rhubarb.
