Sfera Wines Sfera Cabernet Sauvignon
A moderately warm and early spring brought flowering on earlier than the long term average. Gentle slow ripening from summer months without extreme heat allowed for gradual ripening of tannins while retaining high levels of natural acidity in the fruit. Perfect for Cabernet Sauvignon. The fruit from the 20121 ‘Sfera’ Cabernet Sauvignon was harvested from our Block 5 Cab Sauv. Machine harvested at night to retain freshness, before haulage to the winery. For us ‘oxygen’ is a bad word while in the winery. Only small amounts of gentle pumping over was needed for the 2021 year as the colour and tannin were already present from the vineyard. Pressing of skins took place on day 6 and the wine was transferred to stainless tanks. The 2021 Cabernet has hints of spearmint, dark chocolate and classic cigar box. Gliding tannin’s will see this wine sit in the tomb for many years to come. Pair with smelly cheeses or another bottle.

Sorby Adams Neptune Rings Galle Barossa Cabernet Sauvignon
Sorby Adams Neptune Rings is a premium red wine range of signature Barossa grape varieties sourced from the region's finest soils. This collection honors our ancestor, John Couch Adams, who, along with fellow mathematicians, proved the existence of the planet Neptune in the 1840s. His name is immortalized in one of Neptune's five rings. Galle is another ring of Neptune and is our signature Barossa Cabernet Sauvignon wine. This wine showcases a dark, brick-red color with a magenta hue and features complex aromas of cherry and plum. On the palate, rich black cherry and plum flavours come alive, accompanied by hints of licorice and mint, all with impressive length and finesse. It has been matured in French oak hogsheads (30% new) for 24 months, using air-dried wood from Francois Frere and Taransaud Coopers. The grapes are sourced from Angaston in the Eden Valley and Ebenezer in the Barossa Valley. It is enjoyable now and has the potential to age beautifully until 2038. This wine is sealed with QORK.
Isolde Barossa Cabernet Sauvignon
GI: Craneford (Eden Valley) and Ebenezer (Barossa Valley). Dark scarlet red with black edge. Wonderfully ripe and fragrant, the nose is filled with dark plum, cassis and subtle toasted almond. Beautifully weighted, the intense fruit flavours of plum and blackcurrant are complexed by earthy tobacco and oak spice. An elegant and flavoursome wine of harmonious fruit and polished tannins. Matured in French oak (20% new) for 24 months (4 year air dried oak. Francois Frere and Taransaud Coopers – tight grain.) Perfect for herbed lamb or salt and pepper pork on greens.
