These ingredients, among which are mace, pepper, cassia, bay leaf, ginger, allspice, fennel and dill seeds are joined by just a touch of eight-year-old Genever to complete this smooth and complex taste. The Gibson Edition can be used to add a pickled twist to cocktails or can be enjoyed with premium tonic water as your new favourite Gin & Tonic. Add a pickled garnish to finish it off.
Comte de Grasse Gin 44N
First gin distilled on the French Riviera, Inspired by the Perfume Mastery of Grasse. 44N is produced using a unique 3 step cutting edge process. The process is inspired by the high tech extraction and distillation techniques used for making the best perfumes in the world and has never before been used in spirits. The 20 high quality botanicals that go into 44n include Cade (a species of juniper typical to the Mediterranean), Mimosa, Rose Centifolia, Immortelle and Verbena which meld together with our unique process. Top notes The first thing that hits your nose is fresh zingy lemon peel and grapfruit. The aroma of a marine breeze, samphire, is punctuated by touches of mimosa. Cade adds woody, piney facets. Body notes A blooming floral body with hints of Grasse's rose centifolia and jasmine. Jammy facets of bitter orange are countered by the herbaceous punch of angelica. Hints of warm pepper here and there round out the middle notes. Base notes The tangy warm spicy notes of alexanders, underlying all along, allude to the undergrowth where the cade grows freely. Orris and honey ensure a sweet yet musky long-lasting effect on the tongue, holding their end as floral and citrus notes mingle nicely together.
Domaine Alphonse Mellot Sancerre La Moussiere
Biodynamic. La Moussière is one of the great vineyards of the Loire Valley. Cultivated with incredibly rocky, limestone-rich soils, this gently rolling vineyard lies on the ancient Saint-Doulchard marls, which form a part of the great Kimmeridgian chain (à la Chablis). Coupled with Mellot’s meticulous biodynamic farming and low yields, it’s a terroir responsible for some of Sancerre’s most striking and atypical wines. As usual, 50% of this wine underwent fermentation in huge wooden fermenters and was raised in oak casks—a fact that in no way compromises the fabulous purity and energy on offer. The balance of the wine was fermented and raised in traditional concrete vats before blending. All the wine was aged on fine lees for a period of roughly 12 months, further enhancing the wine’s famously deep and pulpy texture.

Woodchips produced on the Estate serves as ecological combustible. The cider is heated once for the first distillation. These cooled and condensed alcohol vapors are between 30 and 35% proof. The second heater is to distill the petites eaux. Only the heart of the distillation is retained. Calvados obtained is 70% proof.
