Harvested from the estates E block as well as from Upper Ngumby Vineyard, the fruit was immediately destemmed and crushed into static fermenters, prior to inoculation. Acholic fermentation followed, after which the juice was kept on skins for about 3 weeks and matured for 13 months in oak barrels. This Cabernet Sauvignon shows an alcohol level of 13%, exhibiting a bright crimson red colour with purple hues along the edges. Attractive aromas of blackcurrants, leaves, violets and earthy notes flow from the nose, with the supple and rounded palate featuring fresh flavours of dark chocolate, bramble and blackberry. This elegant wine is fit for consumption upon release, also having a cellaring potential of 3 to 5 years so that its flavours and structure can enhance further. Foods like Asian BBQ lamb ribs, Beef Tenderloins, meatballs and grilled steaks taste marvellous with this delicious wine.

Compelling and convincing, with florals, currants and blackberries, not too sweet; it has a savoury edge, with the oak seamlessly integrated. Perfectly ripe tannins with poise and presence ensure that this is lovely now, but will be more so in years to come.

This is a typical cool climate Yarra Valley Pinot Noir with aromas of cherries and summer berries and hints of spice and oak. The palate is bright with red fruits and soft tannin. Sourced from a vineyard nestled in the foothills of the cool southern vales of the Yarra Valley where the grey loam soils show seams of deep red volcanic clay, the 2015 Seville syrah is handpicked, fermented with a high proportion of whole bunches and receives no additions other than a small amount of sulphur dioxide at picking and bottling. It is then aged in older French barrels before being bottled unfiltered and unfined.

The Craiglee vineyard was established in the 1860's, and replanted in 1976 by the current winemaker, Patrick Carmody. All wines are made from estate grown fruit using natural processes that reflect the flavours specific to the site. This is an iconic Victorian wine that features a trademark of pronounced cracked black pepper.

Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed.
