Yellow Spot Single Pot Still Irish Whiskey

Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. The simple act of marking barrels with spots of coloured paint would not only signify their age potential, but would become the namesake for this coveted whiskey, bonded and bottled by The Mitchells – a seventh generation family business. As a Single Pot Still Whiskey, these Spot Whiskeys are made using a unique combination of both malted and unmalted barley. This leads to that silky mouthfeel and the pot still spices that these whiskeys were so renowned for back in the old days. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.

Redbreast Strength 12 Year Old Single Pot Still Irish Whiskey

Made from a mash of malted and unmalted barley and then triple distilled in copper pot stills. Redbreast 12 displays the characteristic full and complex flavour of pot still whiskey, with the distinctive influence of pot still whiskey, which has been matured in sherry casks. This very special cask strength expression gives a rare glimpse of Redbreast 12 in its natural, full flavoured state. Michter's US 1 Bourbon Whiskey

Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying their barrels for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the frigid winters and using specific filtration types for each whiskey they make.

Mackmyra Destination Swedish Single Malt Whisky

Mackmyra was Sweden’s first whisky distillery and 20 years after being established continues to innovate and evolve. Mackmyra Destination is a non-peated whisky that to a large extent has been aged in casks that previously held port wine. These casks give the whisky deep notes of red grapes, raisins and a beautiful chestnut colour. Together with American oak casks that contribute with notes of vanilla fudge. The finished result is balanced, yet complex and round. Make sure to let the whisky breathe for a while before enjoying it. This will open up the palette to sparkle with beautiful notes. Pear and raisins on the nose is a lovely combination, followed by sweet notes of fudge and almond. The palate has more prominent notes of vanilla fudge and almond coming from the American oak casks along with sweet raisins and berry-like nuances of white heart cherry and blackberry. On the finish is hazelnut with lively notes of oak.

Togouchi 9 years Japanese Blended Whisky

From the town of Togouchi, made by Chugoku Jozo in underground tunnels. Chugoku Jozo is a Japanese brewery located near Hiroshima. It has been making liqueurs, sake, and the traditional Japanese spirit shochu since 1918. For decades, Chugoku Jozo has developed a knack for making some of the most beautiful spirits in the world. But it wasn't until 1990 that the brewery decided to dabble with whisky by creating its Togouchi line. The master blender carefully chose the distillates (malt and grain) which would be sent to Japan, grown, and blended in the Japanese fashion. The 9 years old refers to the minimum time each whiskies in the blend spent in barrels. NOSE: rather intense and pleasant, dispersing aromas of yellow fruits. Palate: sweet spices, with the appearance of fruity flavors of citrus. In the end, peat and smoke come nicely together. Good stuff.

Mackmyra Limousin Swedish Single Malt Whisky

Mackmyra was Sweden’s first whisky distillery and 20 years after being established continues to innovate and evolve. The flavours of the region are essential for this whisky and are highlighted by the use of French Limousin Oak cask that previously held Cognac from renowned Cognac House Ferrand. To emphasise the fruitiness, we complemented the recipe with older Oloroso casks, as well as casks saturated with berry wine (cherry and forest raspberry wine) to add intrigue, complexity, and a touch of freshness. Limousin pairs perfectly with cold-cut charcuterie or a dark chocolate fondant with caramelised orange. A fruity, playful, gently-balanced Swedish single malt whisky, predominantly seasoned with French Oak casks that previously held Cognac from sun-kissed grapes. The barrels used for this whisky include ex cognac, american oak, olorosso, raspberry wine and ex bourbons barrels. The nose is sweet with citrus, dried fruits and vanilla. On the palate is vanilla caramel, dried fruit, sweet almond and dark chocolate. A light spiciness from the oak and a finish of sun-ripened grapes and soft pear caramel.
