Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results. As with classic malts, Bakery Hill uses only malted barley [ from Tasmania ], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style. Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. Due to its Southern hemisphere birth, swirl anti-clockwise in the glass to waken its slumber and unlock sensory treasures including honey, tangerine, cardamom and brioche.

Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Lark is Tasmanian whisky, proudly unique in character and style. Entirely made by hand with no more than 100 litres at a time, Lark's 58% Cask Strength expression is widely regarded as 'one of the world's best cask strength whiskies', winning numerous international medals and trophies.
