Ink Gin is a beautifully delicate modern Australian gin. Lemon myrtle & orange citrus, soft floral & fresh pine notes are followed by a spicy pepperberry finish. Pot distilled with a blend of 12 Australian native, traditional & exotic botanicals before being infused with an exotic blue flower which imparts smoothness and all natural indigo colour. The flower is pH sensitive, mixing from indigo to blush pink with the addition of tonic, lemon or lime.

Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. Due to its Southern hemisphere birth, swirl anti-clockwise in the glass to waken its slumber and unlock sensory treasures including honey, tangerine, cardamom and brioche.

A distinct style of Australian Single Malt Whisky, Morris Signature is finished in the world’s finest fortified wine barrels for exceptional flavour. Distilled, aged, and crafted in Rutherglen, Victoria using only 100% Australian malted barley at the family brewery, with water sourced directly from the Snowy Mountains positioned to the East. Distilled with original re-conditioned 1930s Whitehill copper-pot and column still named “Aurora” and matured in hand selected ex-wine barrels from family-owned wineries in Barossa and Coonawarra. Wonderfully well-rounded balancing sweet, floral, and biscuit aromas with a richness and warmth of caramel, marzipan, and dark berry flavours. Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Our figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.
