Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Made in the tradition of Scottish single malt, but given a distinctive edge from the wild Tasmanian landscape and their artisanal family approach. A Single Cask, Tasmanian Single Malt Whisky, Non-chill filtered, directly from the Cask. Bourbon Cask aged in American oak wood. Approximately 30-34 bottles produced per batch and bottled at cask strength. Spiced oak, honey and toffee apple on the nose lead to a palate of vanilla and warm buttered honey with subtle notes of bourbon. A lasting finish of roasted almonds and crème caramel.

Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.
Iron House Distillery Port Single Malt Whisky
Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

36 Short Single Malt Australian Whisky
Adelaide brothers, Jon and Con Lioulios own and run Thirty Six Short Distillery from Virginia in South Australia, where they recently launched Australia's first Rakia - partly as a tribute to their late Macedonian father, Pando whose dream was to distil traditional Rakia. The venture is actually named after Pando’s suit size, '36 Short'. A 1200 litre copper pot still also bears his name. The brother's first single malt was released in late 2021, cut back with water sourced from an aquifer that runs directly underneath the distillery. The barrels are locally sourced, x-Shiraz, shaven and charred American oak barrels. This initial maturation is followed by further resting in x Bourbon barrels to add fruity notes, before the liquid is finally returned to the Shiraz casks for a finishing. Advanced in colour, it feels more like a sherry matured Scottish malt than a warm climate Australian whisky. Aromas of oak shavings, pepper, cocoa and a dry nuttiness confirm the wine character, as does the full-bodied delivery: Dried fruits come through at the middle; Cherry ripe chocolate leads the finish where sweeter Bourbon-like notes converge over the wood spices. Even if the oak is a bit overdone, especially after air contact, it's an undeniable success for a first edition. 45% Alc./Vol. Notes from the producers... NOSE: Sweet and fruity on the nose, with tart lime marmalade notes. A faint aroma of fresh cut pine and tropical fruit adds a delicate malt finish. TASTE: A warm roundness encompassing the whisky with character of a tangy dried fruit medley. A hint of vanilla bean, taking you on a long, sweet fruity journey. FINISH: A beautiful long finish with a taste of dried mixed fruit. Lingering with notes of apricot and peaches with a warming finish.

Aromas of toasty butterscotch toffee and malt with notes of roasted almonds, Rich fruit cake and plum pudding. A thick, oily, oaky palate with dried fruits and dark chocolate. The dram builds across the palate to a big, full and zesty peak. The finish is long, warm, and comforting with clean dry and lingering spiciness. Takes a little water very well with more viscosity and marzipan notes developing as it rests in the glass.
