Symphony No. 1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky thats full of life from start to finish and carries the uncompromised signature of Lark Whiskya Tasmanian icon.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Lark’s Head Distiller, Chris Thomson, hand selected the finest Muscat casks from Seppeltsfield Winery, to finish out this rich whisky. A moment of syrup and toffee pecan magic. Easily mistaken for ice cream topping, or a fine Tasmanian fig paste, with creamy mocha on the palate, and a long chocolate orange finish. Best served with friends after dinner. Ink Gin is a beautifully delicate modern Australian gin. Lemon myrtle & orange citrus, soft floral & fresh pine notes are followed by a spicy pepperberry finish. Pot distilled with a blend of 12 Australian native, traditional & exotic botanicals before being infused with an exotic blue flower which imparts smoothness and all natural indigo colour. The flower is pH sensitive, mixing from indigo to blush pink with the addition of tonic, lemon or lime.

Our figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.

Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Hellyers Road Distillery, situated on the picturesque northern Tasmanian coast line, was established in 1997 and is Australia's largest distiller of Australian single malt whisky. Named after Henry Hellyer who was one of the first explorers to set foot in the interior north of the then Van Dieman's Land. This 10 Year Old single malt whisky is Hellyers flagship product and is distilled from Tasmanian grown malted barley, pure rainwater and yeast. American White Oak barrels are used to mature this bespoke malt that delivers a smooth and balanced taste.
