Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. From a thoughtful selection of our Bothwell Distillery’s bourbon, sherry and white oak casks to a balance of both Seppeltsfield PX Sherry and Lark brandy barrels comes a mosaic of a single malt both quaint and comforting. Full of dark forest fruits, bright citrus peel and Tasmanian brandy blanketed in toasted oak, this indulgent little dram is as a slice of fruitcake and a cuppa. A sticky, plummy, homemade fruit cake in a glass, Orange peel-infused caramel pudding topped with spices. Dried fruits play off the rich, earthy oak.

This Limeburners is matured in second fill bourbon barrels and finished in very old, small sherry cask. Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of sherry and vanilla with hints of honey, raisins and buttery caramel. 43% Alc./Vol.

Made and hand bottled at the Great Southern Distillery in Albany on the harbour’s edge in Albany, this complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from premium local barley. This whisky has been made using a peat from near the ‘Valley of the Giants’ and has been matured in an ex-bourbon American oak cask. Exhibiting spice and floral aromas when neat, a splash of water unleashes malted barley, and intense complex smoky aromas. Limeburners Peated has a full bodied taste and a superb smooth finish. Limeburners is distinctly Australian and unique.

A delicate gin that is Juniper forward, with some soft citrus & floral notes up front. The pallet is crisp and peppery off the back of fresh Celery Leaf, Cubeb Pepper Berries and Grains of Paradise. Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Lark is Tasmanian whisky, proudly unique in character and style. Entirely made by hand with no more than 100 litres at a time, Lark's 58% Cask Strength expression is widely regarded as 'one of the world's best cask strength whiskies', winning numerous international medals and trophies. Surprisingly easy to drink at this strength, the whisky driven by a more rich malty alcohol, perfectly dominating the floral and crýme caramel notes to reveal layers of Tasmanian malt bursting across the palate, finishing with lengthy maple syrup sweet notes of highland peat and oily spice.

Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.
