Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Viticulture This Cabernet Sauvignon was grown in the Wilyabrup sub region of Margaret River. The canopy management is a vertical shoot position trellis with a north south facing aspect. The clonal selection is the popular Houghton selection Cabernet Sauvignon. Soil types are typically sandy loam over free draining lateritic sub soils. 2021 is typified by a cool and mild growing season which has culminated in wines of delicacy and poise. Winemaking The fruit was picked on the 11th April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static fermenter for a further 13 days of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 9 months before bottling. Already a multi award-winner, the Amelia Park Cabernet Merlot is a seamless wine that is wonderfully medium-bodied with a fine acid backbone that simply sings from beginning to end.

Classic Margaret River Cabernet can be found in every bottle of Forester Estate's Cabernet Sauvignon. Showing trademark characters of cassis, tabacco, earthiness along with fragrant aroma of mulberry, black currant and dusty oak, that can only be described as exhilarating. Finishing with grace and grainny tannins, this beautiful full bodied Cabernet will reward by careful medium to long term cellaring.

Aromatic dark fruits of mulberry and black plum. A complex and layered palate of primary mulberry and blackberry supported by black olive and dark chocolate with the gentlest hint of toasty french oak. Estate grown from the spectacular hillside vineyard in the Ferguson Valley of the Geographe wine region, fruit is sourced predominately from the Blinman block which was planted in 1998. Soil is typically a deep layer of ironstone gravelly loam over red and yellow friable clay with slight westerly aspects at elevations of 220 to 250m above sea level. The Coat of Arms is an expression of the deep dark fruit characters we attain from the Ferguson region, rich and smooth with lashings of chocolate, entwined with secondary characters of oak and black olive. Winemaking technique enhances the aromatic and flavour profile of the varieties whilst maintaining a long fine tannin structure. Maturation adds further layers.

This Shiraz is uniquely Margaret River, with an incredible combination of fruit, spice and lingering fine-grained tannins. For the 2019 harvest, only the best blocks of Shiraz were harvested to make this limited production wine.

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.
