Also known as "Snow Dome Gin" it makes the perfect gift for those who are hard to buy for and has a spectacular presence with the suspended finger lime caviar swirling and magically suspending in the bottle. A super smooth gin featuring a medly of Hawkesbury grown citrus. Tahitian lime leaf and Kaffir lime leaf also grown on the distillers farm are balanced with aromatic Navelina oranges & juniper from the highest mountains of Bulgaria. Finger lime gin is hand made in micro batches of just 43L using spring water from our farm. Each bottle takes over 1 year to make and mature from growing the fruit to distilling the gin and infusing the finger lime caviar so that when you bite those little pops you get a burst of 40% alcohol gin which is different to the gin they are suspended in. Kyoya Hinata Small Batch Gin is distilled with generous amounts of juniper complimenting the piny flavour and provides this gin its signature warmth. This is a new artisan craft Gin from a historical 1865 distillery Chiyomusubi in the prefecture of Tottori in Japan. Hand crafted and blended with quality and local, genuine Japanese ingredients. Specific botanicals such as (yuzu citrus, Hassaku citrus, ginger and Lindera) are used to the base spirit shocho distilling technology cultivated over many years. The Pooley's planted their first vineyards over 35 years ago in the Coal River Valley of southern Tasmania. In 2013, after working in some of the best wineries around the world, Anna Pooley became the 3rd Generation winemaker of the family business, propelling the estate to critical acclaim. Their vineyards are set on excellent sites that receive very long sunlight hours for optimum ripening while producing fruit with finesse thanks to the close proximity to the cool Tasman Sea. The Butcher’s Hill ‘Oronsay’ Pinot Noir is produced from 20-year-old vines (MV6 clone) on a north-facing slope at 30-100m above sea level. Following a 100% whole bunch fermentation of 21 days, the fruit was pressed to French oak barriques, 40% being new barrels, for 14 months of elevage. Expect a lively acid profile with chalky yet ripened tannin, pronounced weight, aromas of wild cherry, and an underlying savoury character.

Stepping outside of the realm they are renowned for, high quality authentic Japanese shochu, Kyoya Shuzo has successfully made their mark in the world of gin. Using their own Kameshizuku sweet potato shochu as a base, this premium yuzu gin is flavoured with yuzu and hyuganatsu, sansho pepper,citrus fruits and juniper berries.

This sherry cask single malt was matured for 10 years in traditional 250 litre Oloroso casks from Jerez (Spain) and represents the oldest fully matured sherry cask whisky known to be released by any Australian distillery to date and continues Hellyers Road’s legacy of producing sherry cask whiskies of incredible distinction and quality. Toffee, treacle, orange zest, brioche and clove on the nose. Palate coating with rich caramel, honey, subtle chocolate and stewed fruits. The finish is incredibly smooth and elegant with morish sweet notes.
