The Pooley's planted their first vineyards over 35 years ago in the Coal River Valley of southern Tasmania. Their vineyards are set on excellent sites that receive very long sunlight hours for optimum ripening while producing fruit with finesse thanks to the close proximity to the cool Tasman Sea. The Butcher’s Hill ‘Oronsay’ Pinot Noir is produced from 20-year-old vines (MV6 clone) on a north-facing slope at 30-100m above sea level. Following a 100% whole bunch fermentation of 21 days, the fruit was pressed to French oak barriques, 40% being new barrels, for 14 months of elevage. Expect a lively acid profile with chalky yet ripened tannin, pronounced weight, aromas of wild cherry, and an underlying savoury character.

Great Southern Distillery Limeburners Sherry Cask Cask Strength Single Malt Whisky has been matured in ex-bourbon American oak barrels and finished in an old Australian Sherry cask. From here it is transfer straight from barrel to bottle, creating a full and intense flavour. When served neat, this whisky has fruit and spice aromas, but add a splash of water and you get malted barley, honey and vanilla mixed with buttery caramel and raisins. Each unique barrel will exhibit its own unique characteristics, creating slight variation from batch to batch.

Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results. As with classic malts, Bakery Hill uses only malted barley [ from Tasmania ], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style. This Limeburners American Oak Single Malt Whisky was matured in refill American oak bourbon barrels. It has no added colouring and is non-chill filtered and is a lighter, very smooth style of single malt whisky, which really allows the malted barley flavours and ex-bourbon cask influence to shine through.
