It presents with a mix of Aniseed and Lemon Myrtle, China Aniseed, Elderflower, Gentian, Fennel seed, Hyssop and of course the infamous Wormwood.Absinthe is traditionally drunk diluted, and there is no more lavish and beautiful way to dilute the drink than with an Absinthe fountain. Place the spoon over a filled glass of absinthe with the sugar cube on it and sit it underneath one of the taps on the fountain. Slowly drip water over the sugar until it has dissolved.

Loaded with spiced flavour featuring, cardamon, coriander seeds, cubeb peppers, orange rind, and black pepper resulting in an overproof gin of real finesse and power yet smooth on the palate.

A limited release seasonal Gin, inspired by the Marrickville team’s favourite cocktail. This is a juniper-forward Gin (not a Gin liqueur), with tropical botanicals including coconut, pineapple, pandan leaf, lime, nutmeg and allspice. On the nose, there’s a nice kick of juniper with an underlying tone of caramelized pineapple and vanilla. Toasted coconut and hints of sea-spray and citrus add freshness. When sipped, the oily consistency coats the palate with silky coconut flavours contrasted by lime peel bitterness and fresh grassy notes. For serving, this sits well in a Martini or a Southside, but it’s just made for fruit juice - or take the distillery’s advice and make their version of a Piña Colada, with fresh-squeezed pineapple, a splash of coconut cream, a touch of sugar, squeeze of lime and bitters, served simply on the rocks. 5000 bottles produced. 42% Alc./Vol.

Hand-crafted using a combination of locally sourced Riverina citrus, and traditional botanicals, our Dry Gin Murrumbidgee is inspired by the Riverina, New South Wales, the food bowl of Australia. This is the first Gin to be released in Griffith, New South Wales it is wonderfully balanced and juniper-forward, with heavy notes of citrus. A slight hint of the dryness to the palate initially, followed by refreshing citrus presence of New South Wales kelp among our list of botanicals.
