The Craft & Cos Collingwood Dry Gin is an ongoing conversation with the seasons. We are always juniper forward, true London dry style, with native and traditional botanicals.

Created our farm in the small village of Allworth NSW, this boutique batch of hand-crafted gin is our homage to the tradition of gin making and the native flavours of Australia. Thirteen botanicals including native sage, myrtles, pepperberry and our signature native sugar bag honey bestow their magic upon this gin. The rare sugar bag honey is produced in small quantities by Australian native stingless bees. This inscribes a unique citrus sweetness that when distilled using a traditional copper pot still delivers a softness and depth to the gin. The result is a beautifully rich gin, at home in a traditional cocktail yet with the complexity and softness to be sipped neat over ice.

But be patient, that is just the start of an aromatic odyssey. Juniper berries pop like champagne bubbles lifting the senses to a place they have never been. With a little time and aeration Juniper and Coriander enter the scene bringing the depth and distinction that one expects from a high quality Gin. As the spirit evolves further, the taste receptors are going crazy with anticipation, but they will have to wait as White Aspen and Riberry join the party. Add a little Lily Pilly and Dorrigo Pepper leaf and now your getting there. However after some 15 minutes of sipping a brilliant beguiling flavour of native Raspberries dusted with Macadamias emerged bringing a fabulous contrast to the above. A tradional Dry Gin with native Australian Botanicals.Pot-distilled in the hinterland rainforest with a carefully curated mix of native and traditional botanicals. Soft, rounded and expressive, its a traditional dry gin with a local flavour; and naturally gluten free.

Just like your favourite pair of jeans, Dry Cut Gin just fits. A uniquely modern dry gin with a balanced punch of citrus that is a nod to the Australian climate. We use fresh lemon and orange rind, lemon myrtle and a selection of five other botanicals to create a gin that sits comfortably in tonic or naked with soda.Garnish with rosemary, sage, thyme, dill, dehydrated lime, dehydrated orange, wedge fresh lemon, orange and juniper berries.

The flavour experience opens with an initial scent of juniper, followed by rhubarb which produces a fruit compote aroma. On the palate the prominent vanilla creates the perception of sweetness that compliments the juniper flavours very well. Ginger adds a gentle spice to the finish.

This fresh contemporary style gin is a delicately balanced blend of juniper, native raspberry, local orange blossom, macadamia, pink pepper and zesty lemon balm.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

The choice of botanicals is a starting point for any distiller and its inclusion of fresh strawberries that gives this gin its unique blush pink hue. Featuring complex fruit flavours thanks to the inclusion of fresh strawberries, which are steeped together with an array of other botanicals. Available exclusively at Vintage Cellars, this gin is not to be missed.

Delving further into the abundance of native treasures at the Australian National Botanic Gardens, Ad Crescendum var Flosferam Native Gin continues our collaboration with the gardens. This gin is quintessentially Australian, representative of our native flora and highlighting the importance of conservation at the gardens. The nose is crisp and piney. A soft, bright and herbaceous beginning, with delicate floral notes across the tongue. Slight umami. Leads to rich and sweet bush honey notes to finish.
