Col Fondo Prosecco undergoes secondary fermentation in bottle and isnt disgorged. The flavoursome leesy sediment dances on the bottom, hence col fondo, literally meaning from the bottom. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.

The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. The last few releases of Brown Brothers Patricia Cabernet Sauvignon have put this firmly on the map of Australian benchmark Cabernets. The ripe fruits are very concentrated on the palate with distinctive fine tannins, hints of sweet spice and a lingering finish. Nugan Durif exhibits aromas of ripe blackberry, plum and cherry with hints of aniseed and all-spice. A full-bodied wine displaying soft chewy tannins and a youthful fine acid balance with a generous palate of dark cherry and plum pudding with dusty chocolate, earth and spice. Durif is otherwise known as Petit Syrah.

Dating back to 1920, Casa Ermelinda Freitas is run by fourth generation Leonor Freitas, who has been awarded a 'Comendadora' (equivalent to a Dame) for her services to Portuguese wine. Her daughter Joana follows in her footsteps. Aged in barrel, this rich red is packed with spicy berry, herb and mineral character. A top match with slow cooked beef or lamb.
