Umamu create exquisite handcrafted wines from Margaret River. Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

Only the finest parcels of fruit make the grade for these Fidium wines, with each wine carefully blended from the most premium barrel selections.

The 2018 Single Site Cabernet is an elegant wine with notes of blackcurrant, black cherry, and a hint of mint. Displaying a perfumed nose of dark berry fruits and earthy tones, there is a smooth silkiness to balance the fine chewy tannins of the Cabernet.

A unique wine from the 36 years old, low yielding bush vines of the Cape Mentelle's original Estate Vineyard. This Zinfandel exudes flavours of plum pudding, black cherry and sweet spices on a rich, mouth filling palate. Hand picked, basket pressed and matured in the finest oak it is. Crunchy red cherries and an enticing blend of Asian all-spice, red liquorice and star anise, developing into warm mocha notes carried by fine grain savoury tannins and graphite notes characteristic of the Cape Mentelle's Wallcliffe vineyard.

S.R.S. stands for Sub Regional Series. Carefully selected individual grape varieties that excel within a certain sub-region. These wines represent the very best varietal wines under the Flametree label and will only be made in the best vintages, volumes will be small and availability very limited. Exceptional in quality, complexity and finesse. It shows all the perfume and structure that make Wilyabrup Cabernet Sauvignon wines so famous. Lifted blackberries, mulberry, plums, earth and dark chocolate dominate the nose and palate at this early stage. Whilst showing plenty of inky dark fruits, violets and bitter chocolate. The palate also displays wonderful fruit and oak tannin, the result of 16 months oak maturation.

Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.
