The cool-climate of the Adelaide Hills has proven to be a haven for Pinot Noir and is quickly establishing a reputation akin to the benchmark Australian regions. Tim Knappstein from Riposte harnesses the qualities of the region and the varietal with effortless ease with his The Sabre. Fruit for this cool climate Shiraz was selected from a diverse range of vineyards across the Adelaide Hills. It is deep red in colour with bright purple hues, this wine exhibits lifted and intense aromatics, with ripe and spicy dark fruit characters of blackberry and black plum mixed with a touch of pepper and vanilla bean. A full bodied, elegant wine it shows a balanced acidity and silky tannins culminating in a long finish on the palate.

Out of the shadow and into the light steps our Ombre Gamay; ready and poised to take centre stage. Historically cast in the shadow of its varietal neighbour Pinot Noir, Gamay is enjoying a timely moment in the sun. Vibrant in hue and exuberant in youthful personality, this wine delivers juicy red berry fruits on the nose with subtle spice and fine tannins on the palate.

A medium style Grenache which already has a quite open and fragrant nose. The palate is silky and smooth with flavours of blue and blackberries dusted with fine tannins and a touch of spice. Length is long and generous, everything perfectly in place and ready for immediate consumption.

The trailblazers of the Adelaide Hills have created another outstanding wine. A superb expression of modern cool-climate Shiraz; Shaw & Smith is elegantly spicy and brimming with supple red-fruit flavours matched by fine tannins. An absolute ripper.

This grey-skinned grape Pinot Gris underwent a gentle winemaking process with minimal colour extraction from the skin that resulted in a beautiful blush hue. On the nose, aromas of pear and nectarine are complemented by notes of roses and Turkish delight that are introduced by the yeast. The soft palate is laced with pear and lychee flavours leading to a satisfying finish. This varietal can be enjoyed with oven-roasted chicken, meaty fish or pork dishes.

Longviews Shiraz has all the hallmarks of a cool-climate style - spicy, savoury with crunchy berry fruit. The Barbera provides a juicy, cherry-like brightness and taut acid backbone that gives the wine wonderful structure.

The Middle Hill Shiraz is sourced from the middle hill of the K1 vineyard, a picturesque sandstone ridge producing elegant, spicy, cool climate style Shiraz. The nose offers typical cool climate Shiraz aromas of red cherries and subtle spices, including cloves and white pepper. The palate is medium-bodied and complex with red plums, spice and a hint of apricot, followed by a grippy finish.
