Chapel Hill's Cabernet Sauvignon is a superb McLaren Vale wine which rivals others well beyond its price range. Generous blackcurrant, dark cherries, cedar and spice mixed in with fine, firm tannins. This wine can be enjoyed now but will continue to improve with a few years in the cellar.

Here they re-launched their estate wines under the 'Davey Estate' label and concentrate on single sites. This Cabernet is wonderfully youthful and full of vibrancy. The rich and full-bodied Coppermine Road Cabernet Sauvignon, named after a neighbouring road, is based on "parent of the Reynell Clone" material, renowned for its low yield, violet blackcurrant aromas and naturally high acidity. This is a classic "best-of-vintage" Australian-style Cabernet Sauvignon, with a great reputation for aging. Typically it shows intense mulberry, violet, cedar aromas with rich cassis, plum, dark chocolate flavours, muscular tannins and underlying savoury oak. After vinification in headed-down open fermenters, fermentation is completed in barrel. 18 months maturation in new and old French oak follows. Older wines may show a touch of earthy, sage, mint characters.

Chapel Hill's Michael Fragos loves using the Parsons label to showcase McLaren Vale's diversity and varietal character. To achieve the desired style and to harness the regal varietal flavours of Cabernet Sauvignon, the grapes are strategically harvested to avoid any green tannins or overripe jammy fruit flavours. Full-bodied in style, the palate is both eloquently pure and broodingly complex, supported by fine, savoury tannins. A great companion for a medium rare steak with a solid helping of steamed greens.

This class cabernet has deep red colour with purple hues indicating the freshness and quality to come. Aromas of leafy mint with complex capsicum and cedar with ripe berry notes adding complexity with firm tannins and well balanced acid leading to a long finish.

Battle of Bosworth Cabernet Sauvignon is a standout wine of flavoursome red fruits and currants; firmly structured, very rich and grippy. Deserves to be taken very seriously. Proof of such comes with the Trophy for Best Cabernet Sauvignon at the 2011 McLaren Vale Wine Show.

A lovely approachable wine from the guys at III Associates. Plum flavours drive the wine with a soft, plush mouth feel and intergrated tannins. Lovely toasty oak is also prevalent with nice blending of the Cabernet fruit.
