Big Tree Distillery Rhubarb Gin

Made with fresh rhubarb picked from the farms veggie patch and we also raided a few neighbours rhubarb patches as well to make this gorgeous small batch farm crafted pink gin. It makes a refreshing pink blushed G&T with a delicate tang of Rhubarb. Serve with a splash of good tonic on ice with a fresh slice of ginger or apple.

Big Tree Distillery Elderflower Gin Liqueur

A delicious Australian elderflower GiN liqueur made using handpicked elderflowers foraged from the farm's elderberry trees during spring. Infused with the distillerys award winning Elegant Dry GiN, Australian grown sugar and the farms freshly grown lemons and rain water. Made each year in limited batches this seasonal gin liqueur is a refreshing drink to enjoy over summer. Mountain Lapalux Oblivion Gin

Oblivion Gin is a collaborative exploration with Uk based experimental electronic artist Stuart Howard (aka Lapalux) - Resembling an Old Tom style, Oblivion Gin sits at a generous 48% abv. Juniper and Star anise give basis to a floral palate of Elderflower & Lavender, with Black Goji berries providing fruity highlights. A post-distillation addition of Butterfly pea completes the transformation to create a Gin that is uniquely inspired by the same themes of life, death and rebirth that heavily influence Stuart's music.

.Animus Gins often carry a trademark citrus-oil element, but this has a very pure oleo saccharum character on the nose. There’s a little pine-like juniper peeking through, while floral and leafy botanicals sit delicately in front. On the palate the Gin is big and full, with heat, spice and sweetness up-front, rippling viscously over the tongue with layers of balanced botanical flavours, finishing bone-dry with a metallic/saline zing. It’s definitely the perfect Martini Gin, and when mixed the natives and juniper shine, with whispers of pine and acacia, saltbush and those coffee-like wattleseed notes. It takes plenty of skill to balance this number of botanicals, and Sarah has just nailed it. Bravo!

A low-key juniper style with subtle hibiscus and orange blossom aromas blended with locally sourced cherries and raspberries infused in a grape based spirit. Tasting note: Translucent pale pink. A sweet smelling spirit with lifted raspberry jube and glace cherry aromas and hints of Turkish Delight. Medium fresh entry includes raspberry tea and muted pine, sweetening with notes of raspberry sorbet, confectionary and faint juniper in the aftertaste. Balanced, tangy and warming to finish. The two main components of our Vodka; water & grain spirit were meticulously selected from local produce, based on their aromatic intensity, richness, structure.Water was sourced from pristine Blue Mountains ranges in New South Wales which is specifically high in Zinc giving Ancient Wisdom Vodka its unique viscous silky taste.While the wheat grain strain selected is explicitly grown in winter in the high moisture-storing capacity of the clay-based soils of southern Queensland, which plays a significant part in imparting a delicate earthy nose.The vodka is then triple distilled before being gravity fed through Silver and heavily charred Oakwood to achieve the desired viscous mid-palate imparting a lingering earthy finish.
