This medium bodied and elegant wine is a blend of predominantly Cabernet Sauvignon enhanced with a small percentage of classic varietals. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques, producing a complex blend of Margaret River fruit characters including cassis, eucalypt, capsicum, mulberry and plum with secondary notes of chocolate and cedar. 93/100 James Halliday Wine Companion 2016.

Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Pure Margaret River Cabernet ripe redcurrant with a touch of cassis and mulberry overlaid by leafy, violet aromas and dusty cedar notes. Richness, softness and length of flavour are features of all our Cabernets from this vintage. The wine has remarkable mid-palate fruit flavour and richness while still showing the freshness, fineness and acidity for which Margaret River Cabernet is renowned.

Fruit tannin and bold flavours of mulberries and wet slate. A focused core of fine textures and glazed cherries culminates in a mineral and persistent finish.

Redolent in ripe cassis and dark chocolate aromas, the palate is long and structured with perfect poise and balance.

A medium body Merlot with dry, fine tannins and intense dark fruits. French Oak lurks in the background with a fresh tobacco nose. Beautiful plum purple rim in colour makes this a Merlot to remember. Elegant and sophisticated.

An elegant palate with flavours of dried plum, forest fruits and mocha, with some savoury notes. Tight, fine tannins provide length and structure, to this wine that finishes with dark chocolate notes.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.

Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub region and north to Wildwood Rd in an endeavour to capture ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River Cabernet Sauvignon. A deep and inviting black cherry colour with floral notes of violets and fruity, doughy aromas of just baked blackberry muffins. The palate is soft, inviting, and full of free range forest fruits, vanilla, cocoa and loads of supple, fine tannin. Such a pleasure to drink now but with ample ripe tannin structure to allow for aging up to 5 years.

Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish.
