Louis Roederer is a highly respected Champagne producer located in the historic city of Reims. The renowned Champagne house, founded in the late 1700s, is still owned and operated by the Roederer family. Their signature style consists of an equal blend of Chardonnay and Pinot Noir, with a touch of Pinot Meunier, which comprises approximately one-fifth of the blend. Louis Roederer's most famous wine is Cristal, a prestigious Champagne that has captured the hearts of wine enthusiasts worldwide. The house was founded in 1833 and aimed to capture foreign markets, particularly Russia. Roederer became the wine of choice for the Russian royal family, and Cristal was created for Tsar Alexander II. Louis Roederer acquired grand cru vineyards in Champagne in 1845, which was unusual for the time as most houses were buying grapes from growers. Today, the Roederer vineyards encompass around 240 hectares of land, with around 25% managed biodynamically. Cristal is available in standard and rosé formats, with the latter being less common. Cristal rosé is also made from similar proportions of Pinot Noir and Chardonnay, but the Pinot Noir is left on skins for a longer time before pressing. Around 20% of the wine is aged in large format oak, resulting in a light rosé colour with hints of onion skin. Cristal wines are also available under the Vinothèque label, which undergoes late disgorging, extended lees aging, and further cellaring in the Louis Roederer cellars in the bottle. Family run since the 19th century, the Billecart Champagne house delivers large number of bottles which are always well made and of the highest quality. Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Champagne Billecart-Salmon is still a family-run organisation with seventh generation Mathieu Roland-Billecart overseeing business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong "tasting committee" along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart. By 2020 production had expanded with grapes now coming from 300 hectares and 40 crus mostly within 20 kms of the winery. This unique release celebrates 200 years of Billecart-Salmon independence and family savoir-faire since 1818. Bicentenary Cuvée 200 is a multi-vintage blend of four exceptional harvests: 2000, 2003, 2008 and 2012. In tribute to the foundation year, just 1,818 magnums and 18 Jeroboams were produced. The blend constitutes wine heralded from eight Grand Crus in the Montagne de Reims and Côte des Blancs, 50% of which were vinified in oak barrel. The champagne is Pinot Noir dominant in order to reflect the ‘old rose’ fragrance that is typical of Billecart-Salmon's famous Clos St-Hilaire, as well as the founders’ cuvées Nicolas François and Elisabeth Salmon. Majestic, intense, full bodied and tannic, Cos dEstournel is considered the leading wine of St Estèphe. Highly tannic in its youth, over time it develops much much like the great wines of adjoining Pauillac. The wine is typically a blend of 60% Cabernet Sauvignon, 38% Merlot and 2% Cabernet Franc, consistently displaying immense power and evident breed.

Château Lafleur is a tiny 4.5-hectare Pomerol property located opposite Pétrus and producing wines of comparable quality. It is owned and run by Sylvie and Jacques Guinadeau. While the majority of great Bordeaux châteaux have changed hands over the past several generations, Château Lafleur remains in the same family hands to this day. Its vineyards are situated on the gravel-rich Pomerol plateau and adjoin those of La Fleur-Pétrus. The soils here are particularly deep and are enriched by deposits of potassium and iron. Only natural fertilisers are used and yields are painfully low, even by Pomerol standards. Lafleur's wine is typically a blend of Merlot (50%) and Cabernet Franc (50%). It is aged in small oak barrels (50% new) for 18 months. Wines from Lafleur display a spectacularly intense perfume (partly attributable to the high percentage of Cabernet Franc in the blend) and display layers and layers of concentrated, black fruits, minerals, tobacco spices and creamy liquorice on the palate. The best vintages can last for up to 50 years.

Named for the fourth century Latin poet Ausonius, Chateau Ausone sources from a mere 7.3 hectares of vines, set in the south of Saint Emilion. The fortunes of Ausone waned in the mid twentieth century, but have been revitalised by property manager Pascal Delbeck who has helped reestablish the reputation of the famed house. Renowned consultant winemaker Michel Rolland guides the Vauthier estate flagship to near perfection in 2010; the Merlot and Cabernet Franc blend showing density, richness and profound structure, that suggests time in cellar is not only essential for its first ten years, but likely a benefit for another forty years further..

Chateau Cheval Blanc is without doubt, the finest estate in St Emillion, and regarded as one of the greatest Bordeaux wines of modern times. Set next to Pomerol, the estate is set on a unique soil profile that meshes clay, sand and gravel over a bed of rock. Winegrower Pierre Lurton is regarded as one of the most highly skilled in Frane, and the wines are highly collectable and of extreme quality. The 2010 harvest is 54% Cabernet Franc and 46% Merlot, and regarded as one of the greatest releases of all time - a classic that will cellar for half a century, and duly showcase the complexity, luxury and textural experience possible from such a very fine wine.

Chris Ringland's Barossa Ranges Shiraz is steeped in the Barossas post-colonial story and the high art and science of winemaking. Typically deep in colour with intense dark berry, paneforte, espresso roasted chestnut aromas, it displays a plush and concentrated palate with blackberry, mocha, paneforte spicy flavours and dense fine chocolaty tannins. Despite the opulence, flamboyance, richness and concentration, the wine has superb percussion and freshness. The wine is a small vinification of around four to five hogsheads or 1500 litres. The "unusually thick skinned" Shiraz is entirely sourced from Chris Ringland's dry-grown vineyard on the edge of the Barossa Valley, but technically in Eden Valley, along Flaxman's Valley near Randall's Hill. The wine is "painstakingly hand-made" in open fermenters and regularly pumped-over to extract colour, flavour and tannins. After draining and pressing through a traditional basket press, fermentation is completed in 100% new French oak hogsheads. A period of up to 50 months oak maturation follows to achieve optimum complexity and balance between oak and fruit. The extraordinarily high release prices (higher than Penfolds Grange), limited production and reputation make Chris Ringland Barossa Ranges Shiraz the stuff of legend.
