Álvaro Domecq Fino La Janda
Pale golden colour and bright appearance, with a strong and biting aroma, intense vegetable nuances and notes of yeasts and almonds. It is an elegant, long dry wine on the palate, slightly warm and with a long persistence. This wine is aged through biological aging by the Jerez system of solera and criaderas, in American oak barrels of approx. 500 liters capacity.

Bright, very pale straw-yellow colour with green shades. This Manzanilla has lifted floral aromatics of chamomile, with underlying nutty almond complexity. It is smooth with notes of almond and a briny seaspray. Chambers Old Cellars Vintage Port
Aromas of dark chocolate, fresh forest fruits and plum. The palate is intense in the dark chocolate spectrum accompanied by the ripe fruit notes. The tannins are soft and supple with the spirit integrated. Food match- Beef Ragu. This wine has a deep red colour. Founded in 1858 by William Chambers and situated just one kilometre west of Rutherglen, on the Corowa road. The original vineyards which were replanted after phylloxera attacked the area in the late 1890's now have some irrigation, and produce low tonnages with wonderful concentrated flavour. Rosewood's fifth generation winemaker Bill Chambers OAM, handed over to son Stephen in 2001. The proud tradition of winemaking continues from the rich old fortified wines made in the early 1900s by great grandfather Will Chambers who started off the wonderful Tokay and Muscat blends which today are renowned throughout the world. The Rare Muscat and Rare Tokay consistently receive perfect, 100 out of 100 scores from the influential wine writer Robert Parker Junior of the Wine Spectator who refers to Bill as the "Master of the Fortified wine business of Australia".

Barbadillo Amontillado
Barbadillo Amontillado begins as a Manzanilla, however, during 3 years in the Solera system, yeast on the surface of the wine consumes all the sugars and dies away, wine begins to oxidise and turns a deep golden colour. After a further 3 years, the wine is blended with a little Pedro Ximenez and fortified to 17%.

Cockburn's Fine Tawny Port is sourced from fruit grown in the lower Douro region that produces a lighter, more fragrant style of fortified wine. Losing a touch of its colour during maturation in oak, the tawny takes on flavours of butterscotch and a nice nuttiness. Perfect as an after-dinner dessert wine, or chilled down and served with an array of fine nuts such as almonds and walnuts.
