GAUTIER XO is a powerful blend of old eaux-de-vie, some of which come from or "Paradise Cellar" where the oldest and most precious Cognac eaux-de-vie are kept. A golden amber colour. A rich and harmonious blend of old eaux-de-vie, combining intense aromas of candied fruits, cinnamon and toasted bread, with subtle floral notes. Generous and smooth in the mouth, it offers a beautiful length on the palate.

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.

Clement LElixir comes from the blend of rums aged 6 years. A vintage that has aromatic characteristics. Though power and density is a motif in 2010, there is a surprising suppleness in this wine, born from central St-Emillion vineyards and the same family of wine as Chateau Rauzan-Segla of Margaux. Almost evenly split between Merlot and Cabernet Franc usually, it''s three quarters Merlot in 2010; the wine matures in oak barrel for 18 months, with around 70% of those offering new wood character. While dense and compact, there is a succulence to the wine that suggests cellaring to two decades would be apt.

An exceptional blend of reserve stocks of Grande Champagne Cognac, distilled in the mid 1970s and matured in old casks. On the nose there are delicate fragrances of spice, sesame seed, oak, baked pears and brown sugar. The palate is deep and viscous with moderately sweet notes of ripe pear, almond, oloroso sherry, orange peel, and leatherwood honey. The finish has hints of brown sugar with notes of vanilla and salt and has great persistence.

Taittinger Comtes de Champagne is the finest expression of the world famous wine from one of the greatest Champagne Houses. First produced in 1952, Comtes is made from 100% Chardonnay grapes from 6 Grand Cru sites in the Cité de Blancs. Showing a pristine pale yellow colour with very light, abundant bubbles which rise uniformly to form a fine mousse. The evocative bouquet opens with notes of pears and fresh cute white flowers. Left in the glass for a time, the nose develops a richness and density of pure character. Once on the palate, Comtes is lively, direct and precise with flavours of candied lemon zest and fresh pineapple. The balance is something to behold. This Champagne's marriage of finesse and aromatic intensity is a promise of further potential, but already offers very pleasurable drinking.

For this Grenache blend, grapes are hand-picked, with double sorting at the vine, followed by a third sorting at the winery. Gentle crushing and selective destemming, followed by 25-40 days' traditional fermentation in temperature-controlled stainless-steel and wooden vats.
