The Serafino Sorrento Chardonnay is a crisp style of white wine, full of flavour and bustling with liveliness just like the Sorrento Township. This is the 1st release of the Serafino Sorrento Chardonnay, a wine that takes a modern twist with exciting new labelling and refreshing winemaking. Sorrento is one Italys most famous towns and one of Serafino (Steve) Maglieris favourite beaches. Vincents Breeze wines take their name from a picturesque stretch of water found between the Fleurieu and Yorke peninsula in South Australia known as the Gulf St Vincent. These wines were created by blending a number of separate vineyard parcels with the aim of balancing the strengths of each.Honeydew and brown lime flavours intertwine with a smooth and creamy mid palate. Fine natural acidity give great length and balances the textural oak characters.

The Fiano comes from two vineyards in McLaren Vale grown by Ben Lacey. One in the Tatachilla sub region of southern McLaren Vale. Only a few kilometres from the sea and almost at sea level, it is a cool maritime influenced area of the Vale. Sandy loam over a shattered limestone base, scattered with ironstone fragments. This parcel was fermented in stainless steel, using a combination of natural and mixed culture yeasts. The second vineyard is in the Northern and high-altitude region of Seaview in McLaren Vale, with thin red loam over a solid limestone geology. The grapes were harvested with a selective harvester and tipped straight into an open fermenters as whole berries. Fermentation was allowed to occur naturally and then later over seeded with aromatic yeast. The ferment was allowed to tick away slowly for approx. 3 weeks. The final blend was 60% cold tank ferment, 40% full skin contact for three weeks.

Certified Organic grapes were handpicked in the cool early morning and crushed, chilled, and pressed on arrival at the winery. The juice was then transferred into French oak barrels for fermentation. Once fermentation was completed the barrels were stirred weekly, suspending the yeast lees giving the wine extra texture and suppleness. After 6 months in barrel the wine was racked off lees and given a light filter prior to bottling. Light straw in colour with green hues and aromas of bright guava,

We make our Mistelle using Chardonnay grape juice which is fortified with spirit and then matured for a number of years in older oak barrels. This allowed the wine to develop the desirable complex characteristics of the desert wine style. The result is a deliciously light desert style wine. In order to make this delicious fortified style, a specially selected parcel of Chardonnay was chosen to be fortified, then matured for a number of years in older French and American oak barrels. CELLARING This delicious developed fortified style which is ready for drinking now will continue to mature and change in the bottle, and can be laid down for a time.
