Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

With an unbroken line of vintages from the experimental 1951, Grange clearly demonstrates the synergy between shiraz and the soils and climates of South Australia. A fusion of preserved figs, black plum, blackberry and black liquorice flirts with an aromatic elution of fish oil, anchovy, soy and sesame/nori. Nascent scents of toasted charred meats (rotisserie rib of beef), rendered fat/marrow... Penfolds Bin 169 is a single region wine made to showcase pure Coonawarra characters of cassis and eucalypt. The wine typically shows ripe black fruit characters with vanilla oak, ripe fine-grained tannins framed in a classical structure. Bin 169 is matured in 100% new French oak for approximately 14 months.

The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - balance between fruit and oak, giving the wine character and longevity.

Created in 1962, Penfolds Bin 128 is a regional wine that reflects the unique climate and growing conditions of South Australia's Coonawarra district and the relatively elegant style of cool climate Shiraz. From the 1980 vintage, French oak replaced American, highlighting the pepper, spice and floral characteristics that define this style. Since the mid-1980s, a greater attention has been paid to fruit ripeness, resulting in a wine that is fuller in style and structure.

Widely regarded as one of Australia's benchmark fortified wines, the Penfolds Grandfather Rare Tawny rightfully lays claim to such a title. High quality blending stock has been lovingly matured in small oak casks, and creates a wine of immense complexity and depth.

Since the early 90's, Penfolds have been producing Chardonnay from the cool climate region of Tumbarumba. The Chardonnay is elegant with white florals, stone fruits and a great acidity structure. Maturation in French Oak gives the Bin 311 a subtle nutty savoury flavour through and through. A great all season wine for all sorts of occasions.
